Kadai Mushroom

Kadai Mushroom  is a one of the best recipes I have come across recently. Do try this recipe and I am sure you will keep making it.

Ingredients:

  • 500 gms Mushroom
  • 1 tsp Jeera
  • 1/2 inch chopped Ginger
  • 4 medium Onions (3 chopped finely and one into square pieces)
  • 1 tsp Ginger-Garlic Paste
  • 1tsp Turmeric Powder
  • 2 tsp Chili Powder
  • 1 btsp Coriander Powder
  • 3 Tomatoes (2 tomatoes pureed and one tomato chopped into square pieces)
  • 1 Capsicum (chopped into square pieces)
  • 5-6 Cashews
  • 3 tbsp Butter
  • 1 Bay Leaf
  • 1 inch Cinnamon
  • 2 tsp Kasuri Methi
  • Little Coriander Leaves
  • 2 tbsp Cream (Optional)
  • Salt to taste

Prepare Kadai Masala

Ingredients:

  • 4 tbsp Coriander seeds
  • 1 tbsp Jeera
  • 1 tbsp Peppercorns
  • 4-5 Red Chilies
  • 4 tbsp Oil
  1. Grind Coriander seeds, Cumin seeds, Red Chilies and Peppercorns to a coarse Powder.

  2. You can make this and store it in a airtight container and use it next time whenever you make.

Method:

  1. In a pan add Butter. Add Bay Leaf, Cinnamon, Panner (cut into square pieces), Onions, Tomatoes and Capsicum that are chopped into square pieces in it. Add 1 tbsp Kadai Masala (preparation is mentioned above), pinch of Turmeric powder, Chili powder, Coriander powder and Salt. Keep these sauted veggies aside.IMG-20200412-WA0081
  2. Pour Oil in a Kadai. Add Jeera and chopped Ginger. Let the raw smell of Ginger disappear.
  3. Now add finely chopped Onions into it and saute till they just turn translucent.
  4. Add Turmeric powder, Chili powder, Coriander powder and little Salt. Fry this masala for a while.
  5. Add Tomato Puree and cook till oil separates. Add water to adjust the consistency. Allow it to Boil.

  6. Once the gravy boils, add the sauted veggies into it. (Mentioned in step 1)
  7. Adjust Salt and water.
  8. Add Kasuri methi, Coriander leaves and Cream (optional).
  9. Your hot and yummy Kadai Mushroom is ready. Serve it hot with Chapatis.

Khichdi (Rice, Moong Bean and Dal, Veggies)

Time Required: 10 Minutes
Servings: 2

Khichdi is a very easy to make nutritious dish which I make to feed my daughter (2 yr old) for lunch or dinner. Here I have used Rice, Dal and a vegetable. You can use different types of dal/pulses and different vegetables.

Ingredients:

  • 3 tbsp Rice
  • 2 tb Moong dal
  • 1 tbsp whole Moong
  • 1 Carrot
  • 1 tbsp Ghee
  • Salt to taste

Method:

  1. Wash Rice, Moong dal, whole Moong, and Carrot.

  2. Put these in a cooker and add Ghee and Salt to it.
  3. Cook it for 2 to 3 whistles.
  4. Your simple, yummy and nutritious Khichdi is ready!

Kadai Paneer

Kadai Paneer  is a one of the best recipes I have come across recently. My husband made it and it was very tasty. I am sharing his recipe with you all. Do try this recipe and I am sure you will keep making it. Paneer has a fairly high level of fat and proteins due to which it has a great value in diet. It also contains calcium and phosphorus.

Ingredients:

  • 250 gms Paneer
  • 1 tsp Jeera
  • 1/2 inch chopped Ginger
  • 4 medium Onions (3 chopped finely and one into square pieces)
  • 1 tsp Ginger-Garlic Paste
  • 1tsp Turmeric Powder
  • 2 tsp Chili Powder
  • 1 btsp Coriander Powder
  • 1 Capsicum (chopped into square pieces)
  • 5-6 Cashews (Optional)
  • 3 Tomatoes (2 tomatoes pureed along with cashews (Optional) and one tomato chopped into square pieces)

Veg Pizza

How to make Pizza Base

Ingredients:

  • Approx 2 cups Maida / All purpose flour
  • 1/2 cup Water
  • 1 tsp Dry Yeast
  • 1 tsp Salt
  • 1 tsp Sugar
  • Ghee/Oil

Method:

  1. Take Luke warm water in a bowl (water should be warm and not hot!!!)
    Add Sugar and then dry Yeast. Mix gently and keep aside for 15 min.

    -If the water gets frothy, it means you are ready to continue with the process of making dough for pizza base.
    -If the water remains unchanged then repeat the process with warm water again because it means the yeast had not done its job.
  2. Now add Salt to this water and go on adding Maida to make the dough.

  3. Once the dough is ready, add Ghee/Oil and knead again to get a soft dough texture.
  4. Keep it closed for an hr or 2 or so. The size of the dough doubles. This is when you can continue.

  5. Now pat it and make the dough into 2 balls. Here the measurement I have used makes two medium Pizza base.

How to make Pizza Sauce

Ingredients:

  • 4 medium Tomatoes(finely chopped or Pureed)
  • 1 small Onion
  • 6 Garlic Pods
  • 1 tbsp Mixed Herbs
  • 1 tbsp Chilli Flakes
  • 1 tsp Sugar
  • Salt to taste
  • 2 tbsp Ghee/Oil

Method:

  1. Take a pan, add Ghee/Oil and heat it.
  2. Now add chopped Garlic, and cook till it turns slightly brown.
  3. Now add chopped Onions and fry till translucent, add Tomatoes, Salt and Sugar.
  4. Cook till tomatoes get mushy and thick.
  5. Add Chilli Flakes and Mixed Herbs.
  6. Pizza Sauce is now Ready!

Arranging Toppings

Ingredients:

  • 1 Onion
  • 1 Capsicum
  • 2 Mushrooms
  • Small piece of Pineapple
  • Few Spring Onions
    (Above Ingredients is what I have used, you can use your choice of veggies)

Method:

  1. Wash and chop all the above ingredients and keep aside.

The assembling of Pizza

  1. Take the oven safe pan, Take 1 ball of Pizza Base dough and spread it across to form a nice circle.

  4. Now its time for the Toppings.

Baking(Convection Mode)

  1. Preheat the oven to 200 C, once its done you can hear a beep.
  2. Now open the oven and place the Oven Pan with assembled pizza in it. Mark 20 Minutes for cooking.

Cheesy Pasta with Veggies

Time Required: 40 Minutes
Servings: 6

Ingredients:

2 cups Pasta(any)
6 Cheese slice or 1 cup grated Cheese
2 tbsp Chilly Flakes
1 tbsp Mixed Herbs
Salt to taste
1/2 cup Grated Carrot
1/2 cup chopped Beans
2 tbsp Butter
3 cup Milk

How to cook Pasta:

Take a thick bottom vessel filled with water, add salt and olive oil and bring it to boil.
Now add required quantity of pasta and cook till done.
Strain it when done, keep aside.

Method:

  1. Heat a thick bottom pan, add Butter.
  2. After butter melts add Veggies(carrot and beans) and saute it for 3 minutes.
  3. Now add cooked Pasta and Milk. Give it a stir.
  4. Now add Cheese (grated or the slice), Mixed Herbs, Chilly Flakes and Salt.
  5. Cook till cheese melts and get incorporated properly.
  6. Cheesy Pasta with Veggies is ready! This tastes best when served hot.

Note: You can add your favorite veggies to this dish. Veggies like Carrot, Beans, Sweetcorn, Broccoli, Baby Corn, Mushrooms can be used.

Ragi Balls (Kannada: Ragi Mudde)

Time Required: 15 minutes
Servings: 2

Ragi mudde is one of the popular dishes of Karnataka. Its made with just Ragi flour, water and salt. Mudde by itself does not have any taste. Its served along with veg or non-veg curries. It goes very well with spicy non-veg curries.

Actually  we visited a restaurant which served Ragi Mudde and spicy Chicken Curry and it was Yum. Hence we decided to try this dish in our kitchen. Just give it a try and we are sure that you will make it again and again.

Ingredients

  • 1 cup Ragi Flour
  • 2 1/4 cups Water
  • 2tbsp Ghee or Oil
  • Salt according to your taste

Method

  1. In 1/4 th cup of water add 2 tbsp of Ragi. Mix it and keep this mixture aside.
  2. Boil two cups of water and add salt to it.
  3. Add the mixture of Ragi and water to the boiling water.

  4. After a min add the rest of the Ragi flour into it. Lower the gas and keep the spatula into it so that the mixture does not overflow. Leave it for 2 mins on heat.

  5. Now start mixing using a flat spatula and see to it that no lumps are formed.
  6. Put little water on top of the Ragi mixture and close it with a lid. Keep this on low flame for 2 mins.

  7. Now apply little Ghee or Oil to your hand and start making balls out of this mixture.

  8. Serve it hot with Veg or non Veg curries. It goes well with Chicken Curry and Fish Curry.
