Mushroom Curry (Konkani: Alambe Ambut)

Ingredients:

  • 20 Mushrooms
  • 1 medium sized Onion
  • 1 cup grated Coconut
  • 5-6 Red Chilies
  • Pinch of Turmeric Powder
  • Small Piece of Tamarind
  • 1 tbsp Coriander seeds
  • Water
  • 1 tsp Garam Masala powder
  • Salt according to your taste

Method:

  1. Wash and chop Mushrooms.
  2. Put the grated Coconut in the Mixer/Grinder.
  3. Add Red Chilies, Turmeric, Tamarind, Coriander seeds and water.

  4. Grind it till it becomes smooth masala.
  5. Saute chopped Onion till it becomes golden brown.

  6. Add Garam masala powder and fry it for 2 minutes.

  7. Add the Mushrooms and cook them in the cooker (1 whistle).

  8. Once the Mushrooms are cooked, pour the ground masala. Allow it to boil.
  9. Add Salt.
  10. Tasty Mushroom Curry (Konkani: Alambe Ambut) is ready.

Pomfret Curry (Konkani: Papletache Ambut)

Ingredients:

  • 3 Big Pomfret
  • 1 medium sized Onion
  • 1 cup grated Coconut
  • 5-6 Red Chilies
  • Pinch of Turmeric Powder
  • Small Piece of Tamarind
  • 1 tbsp Coriander seeds
  • Water
  • Salt according to your taste

Method:

  1. Clean and wash pieces of Pomfret thoroughly.

  2. Put the grated Coconut in the Mixer/Grinder.
  3. Add Red Chilies, Turmeric, Tamarind, Coriander seeds and water.
  4. Grind it till it becomes smooth masala.

  6. Saute chopped Onion till it becomes golden brown.
  7. Pour the ground masala. Allow the masala to boil.
  8. Put the cleaned Pomfret pieces.
  9. Add Salt.
  10. Allow it to boil on the low flame for 5 minutes.

Cabbage Tomato Sidedish (Konkani: Cabbage Upkari)

Time Required: 30 Minutes

Ingredients:

  • 1/2 of medium Cabbage (shredded)
  • 1 medium Tomato cut into cubes
  • 1 medium Onion finely chopped
  • 1 tsp Turmeric Powder
  • 2 tsp Red Chilly Powder
  • 3 tbsp Olive Oil
  • Salt to taste

Method:

  1. Take a non stick pan and add Olive Oil.
  2. When its hot, add Onions and saute till transparent.
  3. Now add Tomatoes and cook for 2 minutes.
  4. Add Turmeric Powder and Red Chilly Powder.
  5. Now add Cabbage and mix well and allow it to cook.

  6. Add salt and cook till done.
  7. Serve it hot as a side dish for Rice or Chapati.

Chapati / Phulka

Time Required: 30 Minutes

Ingredients:

  • 1 cup Water
  • 2 tsp Sugar(optional)
  • Salt to taste
  • Wheat Flour
  • 2 tbsp Ghee

Method:

  1. In a bowl, take Water, Sugar and Salt. Stir till Sugar and Salt is dissolved.
  2. Now add Wheat Flour little by little and knead a dough. Make the dough soft as shown.

  3. Keep aside for 30 minutes.
  4. Now make small balls and flatten to make a round disc with rolling pin.
    Note: If you r making chapati, make small disc, apply ghee, fold it twice to get triangle and flaten it again with rolling pin.

  5. Do this with remaining dough.
  6. Heat a non stick pan, and bake the chapati/ phulka both side.

Spiced Deep fried Okra / Bhindi Fry

Time Required: 30 Minutes

Ingredients:

  • 20 medium Okra (sliced round)
  • Oil for deep fry
  • 1 tsp Red Chilly Powder
  • 1 tsp Garam Masala
  • 1 tsp Aamchur Powder
  • Salt to taste

Method:

  1. Deep fry washed, dried and sliced okra and keep aside.

  2. Okra should be brown to be crisp.

  3. Take Red Chilly Powder, Garam Masala Powder, Aamchur Powder and Salt-mix well.
  4. Toss fried Okra in this and serve it immediately.

Brinjal Bharta (Konkani: Vayngana Bharth)

Ingredients:

  • 1 large Brinjal
  • 1/2 cup Grated Coconut
  • 3 Green Chillies
  • 1 small ball of Tamarind
  • Salt to taste
  • 1 small Onion chopped

Method:

  1. Cook Brinjal on a Pan as shown, by continuously turning till its completely cooked.

  2. Remove the skin and separate the flesh part.

  3. Now grind together and make chutney with – Grated Coconut, Green Chillies, Tamarind, Salt and little Water.

  4. Now add cooked Brinjal flesh and grind once more.

  5. Take this in a bowl and add chopped Onions.

Spicy Chicken Sidedish

Time Required: 40 Minutes

Ingredients:

  • 1 kg Chicken, cut into small pieces
  • 2 medium Onions
  • 2 medium Tomatoes
  • 2 tbsp Ginger-Garlic paste
  • 1 tsp Jeera
  • 1 tsp Saunf
  • 2 pieces of Cinnamon
  • 6 Cloves
  • 10 Cardamoms
  • 1 tsp of Jeera Powder
  • 1 tbsp Coriander Powder
  • 1/2 tsp of Turmeric Powder
  • 2 tbsp Red Chilly Powder
  • 1/2 tsp Pepper Powder
  • Salt to taste
  • 6 Mint Leaves
  • 1/2 bunch Coriander Leaves
  • 3 tbsp Oil

Method:

  1. Heat Oil in a pan, add Jeera and crushed Sauf.
  2. Now add Garam Masala- Cinnamon, Cloves and Cardamoms.
  3. Quickly add Onions and saute till transperent. Now add Ginger Garlic paste and cook for a min.
  4. Add Turmeric Powder and Red Chilly Powder.
  5. Now add Tomato and cook.

  6. Now add Chicken pieces and cook on high flame. Add little Water if required.

  7. Add Jeera Powder, Coriander Powder, Pepper and Salt.
  8. Cook till done.
  9. Add chopped Coriander Leaves and Mint just before putting the flame off.

  10. Serve it hot with Chapati or Ghee Rice.

Catfish Fish Fry using Riceflour

Time Required: 15 Minutes
Servings: 2

Ingredients:

  • 2 Catfish slices(you can take any other fish too)
  • 2 tbsp Red Chilly Powder
  • 1/2 tsp Turmeric Powder
  • Salt to taste
  • 1/4 cup Rice flour
  • Coconut/ Olive Oil for shallow fry

Method:

  1. Make a thick paste with Red Chilly Powder, Turmeric Powder, Salt and little Water.
  2. Marinate the Fish slices with the above paste.
  3. Let it stand for 30 Min.

  4. Apply Rice Flour on both sides of fish and shallow fry with Oil.
