Chilly Garlic Asparagus

Time Required: 20 Minutes

Ingredients:

  • 1 bunch Asparagus
  • 1 tbsp Red Chilli Powder
  • 1 tsp Amchur Powder
  • 1 tbsp Garam Masala
  • Salt to Taste
  • 4 garlic pods chopped into small pieces
  • 2 tbsp Cheese grated for garnishing (optional)
  • 2 tbsp Butter

Method:

  1. Heat Butter in a pan.
  2. Add Garlic and saute it golden brown.
  3. Add Asparagus and allow it to cook.
  4. During the cooking process, add Red Chilly Powder, Garam Masala, Salt and mix well.

  5. When Asparagus is almost cooked add Amchur powder and stir.

  6. Remove the dish in serving bowl and garnish with grated Cheese. Serve it Hot!

Beetroot Halwa

Time Required: 30 Minutes

Ingredients:

  • 1 large Beetroot peeled and grated
  • Sugar as per taste
  • Milk
  • 1 tsp Cardamom Powder
  • Dry Fruits of you choice- cashew, raisins, almonds
  • 2 Tbsp Ghee

Method:

  1. Heat Ghee in a non stick pan.
  2. Add Dry Fruits and cook till golden brown.

  3. Add Beetroot and cook till the raw smell goes off.

  4. Now add Milk to soak all beetroot and cook.

  5. Once the Beetroot is cooked, add Sugar, continue cooking.
  6. The mixture slowly gets dry. Put the heat off and add Cardamom Powder and mix well.

  7. Serve it Hot or at room temperature!

Aloo Paratha

Time Required: 40 Minutes

Aloo Paratha – stuffed potato paratha is the most popular breakfast dishes throughout western, central and northern regions of India.

Ingredients:

For Potato Stuffing-

  • 2 medium Potatoes cooked and mashed
  • 2 tsp Red Chilliy Powder
  • 1 tsp turmeric Powder
  • Salt to taste
  • 1 tsp Sugar
  • 2 tbsp Coriander Leaves finely chopped

For Chapati-

  • Wheat Flour
  • 1 cup Water
  • Salt to taste

For sidedish Curd-

  • 1 cup Curd
  • 1 tsp Red Chilly Powder
  • Salt to taste
  • Sugar to taste

Procedure:

  1. To make Potato stuffing, mix all ingredients mentioned “For Potato Stuffing” and keep aside.

  2. To make Chapati, take Water and Salt in a bowl. Now add Wheat Flour as required to make the dough. Let it stand for about 10 min.

  3. To stuff Chapati, Make small balls with dough. Roll it into small disc, add Potato stuffing and close all sides. Now roll it again to make normal chapati. Now the potato is stuffed in chapati.

  4. Heat a non stick pan and cook this paratha bothsides. Aloo Paratha is ready!

  5. For Curd side dish, mix all ingredients mentioned “For sidedish Curd” and keep aside.

  6. Serve Aloo Paratha topped with Butter and along with Curd side dish and Pickle.

Semolina Ladoo (Konkani: Rava Laado)

Time Required: 30 Minutes

Ingredients:

  • 1 1/2 cup Rava (Semolina)
  • 1 cup Sugar
  • 1/2 cup Water
  • 4 tbsp Ghee
  • 1/4 tsp Cardamom Powder
  • Raisins and Cashews

Method:

  1. Pour 2 tbsp Ghee in a Kadai. Add Rava.

  2. Saute Rava till you get a nice aroma. Transfer it in a plate.
  3. Make Sugar syrup in the Kadai using Sugar and Water. (Quantity is mentioned in the Ingredients section).

  4. Turn off the gas. Now add Rava into the Sugar syrup. Add Raisins, Cashews, and Cardamom Powder. Mix it well.

  5. Add 2 tbsp Ghee to the mixture and allow it to cool for 5 minutes. Make Ladoos using this mixture.

  6. Yummy Rava Ladoos (Konkani: Rava laados) are ready!
    Tip: If the mixture becomes too dry and you are unable to make ladoos then add little milk to the mixture and make Ladoos.

Chakuli (Konkani: Chakli)

Time Required: 30 Minutes

Ingredients:

  • 1 cup of Rice Flour
  • Milk (required to knead dough)
  • 2 tbsp Butter
  • 1 tsp Sesame Seeds (Til)
  • Salt
  • Oil for deep frying

Method:

  1. Take Rice flour, Salt, Butter, Sesame seeds in a bowl. Knead the dough using milk.Chakuli (Konkani: Chakli)
