Pineapple Jam (Konkani: Ananasache Pank)

One who loves Pineapple and ofcourse kids will surely like this jam! Just 3 ingredients and the jam is ready in minutes. This goes well with chapati, poori, bhakri etc. Used to ask mom to make it as a kid. Recently remembered, called mom for the recipe and tried out instantly.

Ingredients:

  • 1 cup Pineapple (cut into small pieces)
  • 1 cup Sugar
  • 1/4 tbsp Cardamom Powder

Method:

  1. Mix Pineapple and Sugar and keep on low flame.

  2. Sugar will slowly melt and starts to become syrup.

  3. Turn off the stove and let it cool. The syrup should not be very thick.
  4. Add Cardamom Powder and mix. You can refrigerate it in a air tight container and use as and when needed.

Vada

Vada also called as medu vada, uddina vada, tootu vada is a South Indian delicacy.
Vada is typically and traditionally served along with a main course such as Dosa,
Idli, or Pongal with dippings like sambar, curd and chutney. The ones soaked – in
sambar are called Sambar Vada and in curd is called Dahi Vada. Urad dal is main
ingredient for this recipe. Simply easy to make!

Ingredients:

  • 1 cup Urad Dal
  • Few Curry Leaves
  • Salt to taste
  • Oil for deep fry

Method:

  1. Soak Urad Dal in water for 4hrs.
  2. Remove the water and grind Urad Dal with very little water and make a smooth batter.
  3. Batter should be very thick.

  4. Add Curry Leaves (cut into small pieces) and salt to taste. Mix well.

  5. Heat Oil in a kadai.
  6. Take some batter in hand, make small hole in middle and drop in the oil carefully.
  7. Deep fry till the vada becomes brown/crispy.

Sweet Banana Poori (Konkani: Buns)

Buns usually called as “Mangalore Buns” was originated in Mangalore.

Basically made with maida, but some make with wheat flour too. Buns is sweet, banana
flavored, layered poori ;). The baking soda used helps form layers inside the poori
and make its very soft. You can also avoid adding baking soda and make pooris
immediately. This becomes like normal poori with banana flavour.

Ingredients:

  • 1 large riped Banana
  • 2 tbsp Butter or Curd
  • 4 tbsp Sugar
  • 1/2 tbsp Salt
  • Pinch of Baking Soda
  • Maida (All Purpose Flour)
  • Oil for deep frying

Method:

  1. Mash Banana, add melted Butter, Sugar, Salt, Baking Soda and mix well.
  2. Add Maida and make dough.

  3. Keep for 4 hrs (or overnight) in a closed container.
  4. Make small balls, make pooris and deep fry in Oil.

Chicken Tandoori

Chicken Tandoori is a popular Bangladeshi, Indian and Pakistani dish consisting of roasted chicken prepared with yogurt and spices. The name comes from the type of cylindrical clay oven, a tandoor, in which the dish is traditionally prepared. But in modern days, we use the same process and make in microwave oven 😀

This is one of few recipes which needs ingredients that are mostly present at home. So if you have Chicken and want to make a dish with it, you should try chicken tandoori. Very quick and easy to make. You can even add some chat masala to the marination to enhance the taste.

Ingredients:

  • 2 large Chicken Slices
  • 2 tbsp Coriander Powder
  • 2 tbsp Cumin Powder
  • 2 tbsp Garam Masala Powder
  • 2 tbsp Ginger Garlic Paste
  • 1 tbsp Pepper Powder
  • 4 tbsp Red Chili Powder
  • 1 tbsp Food Color- Red
  • 1 tbsp Turmeric
  • 6 tbsp Thick Yogurt
  • 2 tbsp Lemon Juice
  • Salt to taste
  • 2 tbsp Oil

Method:

  1. Mix all the ingredients except chicken and oil and make a smooth paste.

  2. Clean the Chicken, make some slits on chicken and marinate with the above paste. Add Oil and mix well so as to form a nice coating.
  3. Marinate for an hour.

  4. Preheat oven to 400F and place the marinated chicken on the baking pan (above some baby carrots) and bake for 30- 45 min (till done).

  5. Serve it hot with fried onions and lime!
