Cake- Plain Vanilla

Plain Vanilla Cake is simple and yummy of all cakes which needs basic cake making ingredients.

Ingredients:

  • 200 gms Maida Flour (All Purpose Flour)
  • 200 gms Butter
  • 200 gms Sugar
  • 4 Eggs
  • 2 tsp Vanilla Essence
  • ½ tsp Baking Powder
  • 1 tbsp Butter

Method:

  1. Sieve Maida and Baking Powder in a vessel.
  2. Defrost Butter and pour it in a bowl and then add sugar to it and mix it till sugar completely dissolves. You can use electrical beater.

  3. Add Eggs and Vanilla Essence and beat it again.
  4. Add the Flour and Baking Powder and beat it again.

  5. Now take a Borosil bowl. Apply Butter to it and pour the cake mixture into it.

  6. Preheat oven at 180 degree C for 15 minutes.
  7. Place the Bowl containing the Cake mixture in the oven, on a low rack, in convection mode for 30 minutes at 220 degree C.
  8. After half an hour your tasty cake is ready!!!

Chiroti

Time Required: 30 Minutes

Ingredients:

  • 1 cup Maida
  • 1 cup Sugar
  • ¼ cup Semolina (Rava)
  • ¼ cup Rice Flour
  • 2 tbsp Ghee
  • Water
  • Oil
  • Salt to taste

Method:

  1. Powder Sugar using mixer.

  2. Take Maida, Rice Flour, little Rava, and Salt in a vessel and make a hard dough using water.

  3. Make small balls of the dough as shown in the picture.

  4. Roll them like Rotis.

  5. Apply little Ghee on top of the rolled Maida flour rotis and sprinkle little rava all over and then place another one on top of it. Follow the same procedure till you place 5 or 6 rolled rotis.

  6. Make a roll as shown in the picture.

  7. Cut then into small pieces using a knife.

  8. Place them vertically and press it slightly with your hand and roll them like small puris.

  9. Heat Oil in the Kadai and then deep fry these Chirotis in the Oil till it becomes crisp.

  10. Once done remove it and place it on the tissue paper and sprinkle powdered sugar on both the sides of the Chiroti.

Sesame Seed Panak (Konkani: Tila Panak)

Ingredients:

  • 1/2 bowl Groundnut
  • 3 tbsp Jaggery
  • 1 1/2 glass Water
  • 1/2 cup Sesame seeds (Til)
  • 1 tsp Ghee

Method:

  1. Add Ghee in a frying pan and fry Til till it splutters or turns gloden brown.

  2. Trasfer Til in the Mixie vessel.

  3. Add Jaggery, Groundnut, and Water.
  4. Grind it and then strain it.

Rice Noodles (Konkani: Shevai)

Ingredients:

  • 1 cup Dosa Rice
  • 2 cups grated Coconut
  • 1 glass Water
  • Salt according your taste

Method:

  1. Soak Dosa Rice for 7-8 hours (soak it in the night if you want to make shevai in the morning).
  2. Take soaked Dosa Rice in the mixer.
  3. Add grated Coconut, Salt and little water.

  4. Grind the contents till it becomes a smooth batter.

  5. Pour the batter in a Kadai.
  6. Keep the Kadai containing the batter on low flame and keep on stirring till this mixture dries and becomes thick as shown in the picture.

  7. Take small quantity of this thick mixture and make small balls.
  8. Steam them in a cooker for about 20-30 minutes.

  9. Now put the steamed balls in the Shevai making instrument and make Rice Noodles/Shevai.

  10. Rice Noodles/ Shevai is ready. Serve them with sweet coconut milk.

Potato Side-Dish (Konkani: Batate Talasani / Upkari)

Time Required: 20 Minutes

Ingredients:

  • 4 Potatoes
  • Coriander leaves
  • Water
  • Salt according to your taste

Seasoning:

  • 2 tbsp Oil
  • 2 Red Chilies
  • 1 Green Chili
  • 1 tsp Mustard
  • Asafoetida
  • 1/2 tsp Turmeric Powder
  • 8-9 Curry Leaves

Method:

  1. Wash and peel the skin of Potatoes.
  2. Cut Potatoes into thin long pieces as shown in the picture below.

  3. Take a Kadai and add Oil into it.
  4. Add Asafoetida, Red and Green Chilies, and Mustard. Allow Mustard to splutter and then add finely chopped Curry Leaves.
  5. Add Turmeric powder.
  6. Now add the Potatoes into the kadai and mix it well.

  7. Add water. Do not add lot of water. Potatoes cook fast and do not need lot of water.
  8. Add Salt and allow the potatoes to cook.
  9. Once Potatoes are cooked garnish it with chopped Coriander Leaves.
