Potato Curry (Konkani: Batate Song / Batate Ambut)

Ingredients:

  • 2 medium-sized Potatoes
  • 1 cup grated Coconut
  • 5-6 Red Chilies
  • Pinch of Turmeric Powder
  • Small piece of Tamarind
  • 4-5 Sichuan Pepper (Tepal in Konkani)
  • Water
  • Salt according to your taste

Method:

  1. Wash and peel Potatoes.
  2. Cut Potatoes (medium-sized pieces as shown in the picture).
  3. Cook Potatoes.

  4. Meanwhile put the grated Coconut in the Mixer/Grinder.
  5. Add Red Chilies, Turmeric, Tamarind, and Water.

  6. Grind it till you get a smooth masala. At the end add Sichuan Pepper and grind it for 30 seconds.

  7. Once the Potatoes are cooked, add the ground masala and Salt. Bring it to boil.

Making Butter and Ghee @ Home (Loni ani Toop Karache)

Butter is a milk product got by churning fresh Milk cream and on further processing we get Ghee. It can be used as bread spread, as topping on dosa, for frying and of-course for baking! And when Butter or Ghee is home-made it’s absolutely yum! Here are the steps to make Butter and Ghee.

Procedure:

  1. Separate Milk cream that you get after you boil Milk.

  2. Add little Curd to the Milk cream in the night and leave it overnight.
  3. Next day morning make Butter using Kawlo (shown in the picture).

  4. Now separate Butter and Buttermilk.
    You can make this on daily basis if you like to drink buttermilk. If you need only Butter then you can store Milk cream in the refrigerator for 2-3 days and then make Butter.

  5. Store Butter in a vessel with little water. Store sufficient Butter (at least 3-4 days butter) to make Ghee.
  6. To make Ghee wash the stored Butter thoroughly.

  7. Now transfer the washed Butter into a vessel and keep it on medium flame.

  8. Heat it till the spluttering sound stops and then you will get a nice aroma.

  9. Now the Ghee is ready!

Tilapia Fish Fry

Time Required: 15 Minutes

Ingredients:

  • 2 Tilapia fish slice
  • 2 tbsp Red Chilly Powder
  • 1 tsp Turmeric Powder
  • Salt to taste
  • Oil for shallow fry
  • 1/4th cup Fine Rava (chiroti rava, semolina)

Method:

  1. Marinate washed Tilapia slice with a mix of- Red Chilly Powder, Turmeric, Salt and Water (mix should be a thick paste).
  2. Let it stand for 30 minutes.

  3. Now heat oil in a non stick pan, Apply Rava to Tilapia all over and shallow fry in pan until cooked.

  4. Serve it hot with onions and lemon as a Starter or a Side Dish for Rice.

Onion Chutney Saaru (Konkani: Kandya Tamboli)

Time Required: 10 Minutes
Servings: 4

Ingredients:

  • 1 cups grated Coconut
  • 1 small-sized Onion
  • 3 Red Chilies
  • Small piece of Tamarind
  • Water
  • Salt to taste

Method:

  1. Take grated Coconut in the mixer vessel.
  2. Add chopped Onion, Red Chilies, Tamarind, Salt, and little water.
  3. Grind the contents coarsely.
  4. Transfer the Chutney into a vessel.
  5. Onion Chutney (Kandya Chutney) is ready!
  6. Now add Water and dilute it. Add some chopped onions to it.
  7. Tamboli is ready! Serve Tamboli for White Rice.

Sweet Watermelon Dosa (Konkani: Goda Kalingana Polo)

Ingredients:

  • 1 cup Watermelon (the pinkish white part of watermelon grated)
  • 1 cup Dosa Rice
  • 1 tbsp Methi Seeds
  • 3/4th cup thick Poha (soaked for 2 mins)
  • Jagger to taste
  • Salt to taste

Method:

  1. Wash and soak Dosa Rice and Methi Seeds with grated Watermelon for 4-5 hours.

  2. Now Grind together the above with thick Poha, Jaggery and Salt to get a smooth dosa batter.

  3. Keep the batter overnight for fermentation.

  4. Morning mix it all well and make dosas in a non stick pan.

Urad Dal and Rice Mini Idli (Konkani: Chapo Appe)

Time Required: 20 Minutes

Ingredients:

  • 2 cups Dosa Rice
  • 1 cup Urad Dal
  • 3/4 cup Beaten Rice
  • Oil/Ghee
  • Water
  • Salt according to your taste

Method:

  1. Wash Rice and Urad Dal.
  2. Soak Rice and Urad Dal in water for 6-7 hours.
  3. Drain the water and grind Rice and Urad Dal with required quantity of water to get a thick smooth batter.
  4. Add Beaten Rice and Grind for 5 minutes. Transfer the batter into a vessel.
  5. Add Salt on top of the batter and keep it overnight for fermentation. Do not mix Salt with the batter.

  6. Mix the batter nicely in the morning.

  9. Serve it hot with Chutney.

Appi Payas / Kheer

Time Required: 30 Minutes

Ingredients:

For Poori-

  • 1 cup Fine Rava
  • 1 tsp Ghee
  • Salt to taste
  • Water
  • Oil for deep fry

For Kheer-

  • 1 litre Milk
  • Sugar as per taste
  • Dry Fruits- finely chopped cashew, almonds and rasins (optional)
  • 1 tsp Cardamom Powder

Method:

  1. Mix Rava, Ghee, Salt and Water enough to make tough dough. Cover and keep it aside for an hour.

  2. Make small balls and roll like pooris and deep fry them.

  3. Crispy pooris are now ready.

  4. Boil Milk, add Sugar.

  5. Once the sugar dissolves crush these Poories and add to it.

  6. Mix well and turn the flame off. Add Cardamom Powder.

  7. Garnish with Dry fruits roasted in ghee! Serve it hot or cold.
    Tip: You can make poori in advance and keep in air tight container.

Coriander leaves Side Dish (Konkani: Eiravath / Kotambari palyacho Gojju)

Ingredients:

  • 1 cup Corriander Leaves
  • 1 cup grated Coconut
  • 6-7 Red Chillies
  • 1/4 cup Tamarind
  • Jaggery according to your taste
  • Oil
  • Salt to taste
  • Water

Method:

  1. Pour Oil and fry Red Chillies.
  2. Add Grated Coconut, Coriander leaves, fried Red Chillies, Tamarind, and Salt in the mixer vessel. Add little Water.

  3. Grind this mixture so that it becomes a smooth paste. Add Jaggery.

ChocoChip Cake

Time Required: 1 Hour
Servings: 4

Ingredients:

  • 1/2 cup Maida Flour
  • 1/2 cup Butter
  • 1/2 cup Sugar
  • 2 Eggs
  • 1 tsp Vanilla essence
  • ½ tsp Baking Powder
  • ChocoChip fistfull
  • Almonds for garnish (optional)

Method:

  1. Sieve Maida and Baking Powder in a bowl.
  2. Take Butter(room temp) in a bowl, add Sugar and mix it till sugar completely dissolves. You can use electrical beater.
  3. Add Eggs one by one and beat.
  4. Add Vanilla essence and beat it again.
  5. Add the Flour and Baking Powder mix and beat it again. Add Chcochip and mix it.

  6. Apply Butter to the Cake pan and sprinkle some Flour and pour the Cake mixture into it. Garnish with sliced Almonds.
  7. Preheat oven at 375F. Place the Cake Pan into it for 20 min.
  8. Yeah ChocoChip Cake is Ready!
