Thick Sev (Konkani: Kare)

Ingredients:

  • 2 cups of Gram Flour
  • Little Asafetida
  • Salt
  • Water
  • Oil for deep frying

Method:

  1. Add Asafetida in water and keep it for 10 minutes till it mixes nicely.
  2. Add Gram flour and Salt and knead the dough.

  3. Heat Oil in the Kadai and make Kare using the Sev maker (Dantho). Deep fry on both the sides.

Tamarind Side Dish (Konkani: Amsani Gojju)

Ingredients:

  • 1/2 cup Tamarind
  • Jaggery according to your taste
  • 3-4 tsp Oil
  • 6-7 Red Chilies
  • 1 tsp Mustard
  • Curry leaves
  • Pinch of Asafetida
  • Coriander Leaves
  • Salt
  • Water

Method:

  1. Soak Tamarind and Jaggery in water for 15 minutes.

  2. Pour oil and add Red chilies, Mustard seeds, and Asafetida. After Mustard splutters add Curry leaves. Add this seasoning to the Tamarind and Jaggery mixture.

  3. Add Coriander Leaves and Salt.

  4. Grind this mixture in the mixer so that it becomes a smooth paste.

Bitter Gourd Side Dish (Konkani: Karathe Sukke)

Ingredients:

  • 1 big Bitter Gourd
  • 1/2 cup grated Coconut
  • 2 Onions
  • 3-4 Red Chilies
  • Tamarind
  • 1/2 tsp Coriander Seeds
  • 1/4 tsp Turmeric Powder
  • 2 tsp Oil
  • Salt

Method:

  1. Wash Bitter Gourd thoroughly. Chop them into small pieces.
  2. Add Salt to the pieces and mix it well. Keep it aside for 10 minutes.
  3. Squeeze the Bitter Gourd pieces to remove the bitter juice from them. Discard the juice.
  4. Pour Oil in a Kadai. Add the squeezed Bitter Gourd pieces and chopped Onions into the Kadai and fry them.

  5. Fry Red Chilies and Coriander seeds using little Oil.
  6. Take grated Coconut in the Mixer. Add Tamarind, Red Chilies, Coriander seeds , Turmeric Powder and Water. Grind it.

  7. Add the Ground masala to fried Bitter Gourd and Onion mixture. Add Salt.
  8. Keep it on low flame till it becomes dry.

Mango Jam

Ingredients:

  • 2 cups Mango (Chopped into small pieces)
  • 2 cup Sugar (if the mango is sweet, then reduce the quantity of sugar to 1 cup)
  • 1/4 tbsp Cardamom Powder

Method:

  1. Mix Mango pieces and Sugar in a Kadai and keep it on low flame.

  2. Keep stirring till sugar melts and becomes syrup.

  3. Turn off the stove and allow it cool. The syrup should not be very thick.
  4. Add Cardamom Powder and mix.

Raw Mango Pickle (Konkani: Hindii)

Standing time – 2 Days
Preparation time – 30 Minutes

Ingredients:

  • 100 ml Oil
  • 6 tsp Mustard
  • 2 tsp Fenugreek (Methi) seeds
  • Pinch of Asafetida
  • 1 tsp Turmeric powder
  • Chili Powder according to your taste (depends on how spicy you need)
  • 1 raw Mango
  • 4 green chilies
  • Small piece of Ginger
  • Salt

Method:

  1. Peel and chop the Raw Mango into small pieces.
  2. Add Salt to it and keep it aside for 2 days.
  3. On the third day, heat Oil in a pan.
  4. Add finely chopped Green chilies and ginger and fry it till its raw smell disappears.
  5. Add Methi and Mustard seeds in the mixer and powder it.
  6. Add the powdered mixture into the pan and add Turmeric Powder and Asafetida.
  7. Fry it for a while and then switch off the gas.
  8. Now add Chili powder and mix properly. Allow this mixture to cool down.
  9. Once it cools add chopped Raw Mango that you had stored.
  10. Tasty and spicy Raw Mango Pickle (Konkani: Hindii) is ready!
