Gram Flour Ladoos (Konkani: Besan Laado)

Time Required: 1 Hour

Ingredients:

  •     3 cups Besan Flour
  •     3 cups powdered Sugar
  •     3/4 cup Ghee(liquid)- more or less may be required
  •     1 tsp Cardamom Powder

Method:

  1. Fry Besan in a dry cooking pan till you get nice aroma from it.

  2. Take this flour in a dry bowl, add Cardamom Powder, powdered Sugar, and mix well.

  3. Add Ghee and make ladoos. If you still cannot manage shaping ladoos, then add little more Ghee and you should be able to shape them.

  4. Keep them in a air tight container and have as and when you wish! 😉

Egg Side Dish

Time Required: 15 Minutes

Ingredients:

  • 4 Eggs
  • 4 Onions
  • 2 Tomatoes
  • 1/2 tsp Garam Masala Powder
  • 1/4 tsp Turmeric Powder
  • 1 tsp Chili Powder
  • Salt according to your taste
  • Coriander Leaves
  • 2 tbsp Oil
  • Water if required

Method:

  1. Boil Eggs. Break the shells and cut the boiled eggs into half.

  3. Add Chopped Onions and saute till it turns golden brown.

  4. Add chopped Tomatoes and Coriander Leaves. Mix it for 2 minutes.

  5. Add Chili powder, Turmeric powder, and Garam Masala powder.
  6. Add Salt. If the gravy is very dry add little water.

Egg Bhurji

Time Required: 15 Minutes

Ingredients:

  • 4 Eggs
  • 2 Green chilies
  • 1 big sized Onion
  • Coriander Leaves
  • Salt according to your taste
  • Oil

Method:

  1. Pour Oil in a Kadai.
  2. Add Green chilies and chopped Onions and saute Onions till it turns golden brown.

  3. Break the eggs and beat it in a vessel. Add salt to this mixture.
  4. Pour this mixture into the Kadai.

Shallow fried Brinjal (Konkani: Vayngana Phodi)

Time Required: 30 Minutes

Ingredients:

  • 6 thin slices of large Brinjal
  • 1 tbsp Red Chilly Powder
  • 1 tsp Turmeric Powder
  • 1/2 cup Fine Rava
  • 4 tbsp Oil for shallow fry
  • Salt to taste

Method:

  1. Make a paste of Red Chilly Powder, Turmeric Powder, Salt with little Water.
  2. Marinate the Brinjal slices with this paste.

  3. Keep aside for 20 min.
  4. Now coat the Brinjal Slices with Rava and shallow fry till golden brown.

Semiya Paysam using Almond and Cashew paste (Konkani:Shevai Payas using Badam and Kajubee paste)

Time Required: 20 Minutes

Ingredients:

  • 1/2 cup Vermicelli
  • 1 cup Water (Hot)
  • 1 cup Milk (Hot)
  • Sugar as per taste
  • Saffron (few, optional)
  • Dry Fruits- Almonds, Cashew and Raisins
  • 1/2 tsp Cardamom Powder
  • 1 tbsp Ghee

Method:

  1. Soak Almonds and cashews in water for 1 hour. Peel Almonds.

  2. Heat Ghee in a heavy bottom pan and add dry fruits. Fry them and then add Vemicelli / Semiya and fry till they turn golden brown.

  3. Add hot Water and let it cook.
  4. Grind together the peeled Almonds and Cashews.

  5. Once the vermicelli becomes soft add Dryfruit paste and hot Milk and mix well.
  6. Add Sugar.
  7. Bring it to boil and then simmer and cook for 5 min.
  8. Add Saffron and Cardamom Powder.

  9. Serve it Hot or Cold! Choice is all yours!

Note: If the Paysam turns thick after a while, add little sweet milk and mix it well and then serve.

Horse Gram Saar (Konkani: Kulitha Saar)

Ingredients:

  • 2 cups of Horse Gram
  • 1 big Onion
  • 5 cups of Water
  • Salt according to your taste
  • 2 green chilies
  • 7-8 Garlic Cloves

Method:

  1. Wash Horse Gram and put it in the Cooker.
  2. Fry Onion. Add the fried Onion and water.

  3. Cook Horse Gram (10 whistles). Horse Gram takes a long time to cook.

  4. Once it is cooked transfer the water (Saar) into a vessel. Mash some of the cooked Horse Gram and add it to the Saar.
  5. Add Salt.
  6. Take Oil in a Kadai. Add green Chilies and Garlic Cloves. Fry them till the Garlic Cloves turn golden brown. Add it to the Saar.
  7. Horse Gram Saar (Kulita Saar) is ready! This creates heat in the body so it is made during winter/rainy season and is avoided in summer season.
