Banana Ice-Cream

I had never imagined that ice-cream could be made with just one ingredient! Got this recipe from a internet source while trying to find something. I am not a big fan of banana flavored ice-cream. But this procedure tempted me to try out. Trust me it tasted just like ice-cream ๐Ÿ˜‰

Ingredients:

  • 1 large or 2 small Banana

Method:

  1. Peel and slice Banana into small pieces.

  2. Freeze it overnight or around 5 hrs.
  3. Put the frozen slices into blender and blend it till you get a smooth ice-cream.

  4. Serve it immediately or refrigerate and then serve!

    Note: You can add chocolate syrup or any other flavor while you serve!

Potato Halwa (Konkani: Batate Halwo)

Time Required: 30 Minutes

Ingredients:

  • 1/2 kg Potato
  • 1/2 Kg Sugar
  • Cardamom Powder
  • Ghee (to grease the plate)

Method:

  1. Cook Potatoes in the cooker.

  2. Peel and mash them so that no lumps are formed.

  3. Transfer the mashed Potato into a Kadai and add Sugar. Keep on stirring.
  4. After a while the mixture stats leaving the Kadai and becomes a thick mixture. Add Cardamom powder.

  5. Remove it and put it on a plate (greased with Ghee). Spread the mixture and cut them into square pieces.

Cold Bournvita / Chocolate Drink

Time Required: 10 Minutes

Ingredients:

  • 1/2 litre Milk (freeze it for 4-5 hrs)
  • 4 tbsp Sugar
  • 3 tbsp Bournvita / Chocolate powder

Method:

  1. Pour Milk in the Juicer.
  2. Add Sugar and Bournvita /Chocolate powder. Blend it.

Tea

Time Required: 10 Minutes

Tea on stove is prepared in two ways, one by adding tea powder to boiling water and then adding milk and second by mixing both water and milk, bringing it to boil and then adding tea powder. Either ways the end product is HOT TEA! ๐Ÿ˜€ I carry out the second method as its more simpler and done in one go ๐Ÿ˜‰

Ingredients:

  • ยผ cup Water
  • ยพ cup Milk
  • 2 tbsp Sugar
  • 1 tbsp Tea Powder

Method:

  1. Mix Water, Milk, and Sugar and bring it to boil.
  2. Simmer the flame and add Tea Powder.

  3. Allow it to boil till you get nice aroma and colour.

    Note: You can add Cardamom or Ginger while adding Tea Powder to make Cardamom Tea or Ginger Tea respectively.

Apple Hot N Sweet Sidedish

Time Required: 30 Minutes

The ones who donโ€™t like eating apple as it is, can make this dish and have. This
recipe gives a nice twist to the apple taste. So now, have Apple a day and keep the
Doctor away! ๐Ÿ˜‰

Ingredients:

  • 2 tbsp- Ghee
  • 1/2 tbsp Cumin Seeds
  • 1 Green Chilly slit
  • Ginger small piece
  • 1/2 tbsp Turmeric Powder
  • 2 Apples (peeled and chopped)
  • 1 tbsp Lemon Juice
  • 1/2 tbsp Sugar
  • 1/2 tbsp Red Chilli Powder
  • Salt to taste
  • Coriander Leaves for garnishing

Method:

  1. Heat Ghee in a pan, add Cumin Seeds fry for a min and add Green Chilly, Ginger,ย Turmeric Powder and mix.
  2. Add Apple, Salt and 1/2 cup Water. Close and cook till apple becomes soft.

Fruit Custard

Time Required: 30 Minutes
Servings: 3

Ingredients:

  • 2 cup Milk
  • 6 tbsp Sugar
  • 2 tbsp Custard Powder
  • Fruits โ€“Apple(1/4), Grapes(6), Banana(2 small)
  • Few Dry Fruits- Cherry, Almonds, Cashews, Raisins

Method:

  1. Take Milk in a heavy bottom pan, add Sugar and bring it to boil.

  2. Simmer the flame and add Custard Powder dissolved in 2 tbsp milk. Keep stirring while adding diluted custard powder.

  3. The milk consistency should become thick, now switch the flame off. Let it cool.

  4. Now add all diced Fruits and Dry Fruits.

  5. Refrigerate it for an hour. Serve it cold!

Chilli Chicken

Time Required: 30 Minutes

Ingredients:

  • 1/2 Kg Chicken cut into small pieces
  • 12 Green Chillies
  • 1 tbsp Ginger Garlic Paste
  • 1 Lemon
  • 1 Onion
  • 2 tbsp Oil
  • 1 tbsp Pepper Powder
  • 1/2 tbsp Turmeric Powder
  • Salt to taste
  • Few Coriander Leaves

Method:

  1. Marinate cleaned cut chicken with- Salt, Pepper, Turmeric Powder, Ginger Garlic Paste, Lemon Juice and ground paste of 6 Green Chillies.

  2. Heat oil and fry chopped onions till golden brown. Now add slit green chillies and cook for 2 min.
  3. Add the marinated chicken and fry till oil leaves the sides and then pressure cook till 2 whistles. Add some more pepper and lemon juice at this point mix well and cook for 5 min.

Chicken Kheema with peas and capsicum

Time Required: 30 Minutes

Kheema generally refers to ground/minced meat. This same procedure can be carried out to make mutton kheema (replace chicken with mutton). Never made or had any dish with ground meat. This was my first trial and turned out quite good. For the ones who have never tasted this, it tastes more or less like Egg Burji ๐Ÿ˜€

Ingredients:

  • 1/2 kg Ground/ Minced Chicken
  • Whole Garam Masala (1- Bay Leaf, ยฝ inch Cinnamon Stick, 1- Javantri, 2 โ€“Clove, 2- Cardamom)
  • 1 medium Onion
  • 2 tbsp Ginger Garlic paste
  • ยฝ tbsp Turmeric Powder
  • ยฝ tbsp Red Chilli Powder
  • 1 tbsp Coriander Cumin Powder
  • 10 slit Green Chillies
  • 1 cup Green Peas and Capsicum
  • 1 Tomato
  • 4 tbsp Yogurt
  • 2 tbsp Oil
  • Coriander Leaves (Handfull)

Method:

  1. Heat Oil in a Pan, add Whole Garam Masala and fry for a min.
  2. Add chopped Onions and sautรฉ till transparent. Add Ginger Garlic Paste and fry for 2 min.

  3. Now add Turmeric Powder, Red Chilli Powder, Coriander Cumin Powder and cook for a min.
  4. Add Green Chillies, Tomato, Peas and Capsicum- cook for 2 min.
  5. Add Ground Chicken and Yogurt โ€“mix well. Close and cook till done.

  6. Now open and cook till it becomes dry. Garnish with Coriander Leaves! Serve it hot with Chapati or Poori!

Chicken Biryani

Time Required: 2 Hours

Biryani is a rice based item made using various spices, meat, egg etc. The most popular among the Biryani is Hyderabadi Biryani.

Ingredients:

  • 1 Kg fresh Chicken cleaned and cut into small pieces
  • 2 big Onions sliced
  • Whole Garam Masala(3 cardamom, 2 inch piece of cinnamon stick, 6 cloves)
  • 20 Green Chillies slit
  • 3 tbsp of Ginger Garlic paste
  • 1 tsp of Turmeric Power
  • 2 Tomatoes chopped
  • 1 bunch of Coriander leaves, finely chopped
  • 10 Mint leaves chopped
  • 2 tbsp Lemon Juice
  • Salt to taste
  • 1/4 cup Ghee
  • 1/2 tbsp Food color
  • 1/2 cup of golden fried Onions
  • Some Dry Fruits Raisins and Cashews
  • Some Spring Onions chopped
  • 3 cups Basmati Rice

Method:

To make Rice:

  1. Wash and soak Basmati Rice for 30 min and cook it in boiling water along with half portion of mentioned Whole Garam Masala.
  2. When the rice 3/4th cooked strain the water.

To make the Chicken Masala:

  1. In a cooking pan add the oil and saute the finely sliced onion till translucent.
  2. Add the whole Gram Masala and the slit Green Chillies and fry.
  3. Now add the Ginger Garlic paste saute further, add Turmeric Powder and mix.
  4. Add Tomatoes and half of chopped Coriander and Mint leaves. Cook till the tomatoes are soft.
  5. Add Chicken and Salt. Mix well and cook till done.
  6. Once the chicken is 3/4th cooked add the remaining chopped Coriander and Mint leaves and Lime Juice.

The Biryani:

  1. Take a pan and put a layer of Rice, now put a layer of Chicken Masala on it and again a layer of Rice.

  2. Season the Rice with Raisins and Cashews fried in ghee.
  3. Garnish with Golden fried Onions and Spring Onions.
  4. Pour food color on to the Rice and close the pan with a foil. Place the pan in the oven for 300F for 30 min.
