Peas Bhaji

Time Required: 20 Minutes

Peas is one of my favorite veggie. It is a good source of protein and fibre. For this recipe you can use fresh or dried Peas. The choice is all yours. This recipe was shared by one of my close friend Rashmi Mahale and am thankful to her as me and my family members enjoy having this with Chapati and Dosa.

Ingredients:

  • 1 cup Peas (Fresh or Dried)
  • 3 Onions
  • 2 Tomatoes
  • 2tsp Kitchen King Masala
  • Coriander Leaves
  • Salt to taste

Method:

  1. Wash Peas. (If you are using dried Peas you have to soak it overnight).
  2. Chop Onions, Tomatoes, Coriander leaves and keep aside.
  3. Saute Onions till it turns translucent.
  4. Add Tomatoes and allow it to cook for a while.
  5. Add Peas and mix it well and allow it to cook.
  6. Add Kitchen king masala to it.
  7. Add Coriander Leaves and salt to taste.
  8. Tasty Peas Bhaji is ready! Serve it with Dosa or Chapatis.

Cheesy Veg Sandwich

Time Required: 30 Minutes
Servings: 3

Ingredients:

  • 10 Bread Slices
  • 5 Cheese Slice or 1 cup grated Cheese
  • 1 tsp Red Chilli Powder
  • Salt to taste
  • Butter

Veggies:

  • 2 Onions
  • 2 Tomatoes
  • 5 Mushrooms
  • 1 small Capsicum
  • 1 Carrot
  • 5 strands of Spring Onion

Note: Finely chop all veggies and grate carrot. You can use your favorite veggies for this sandwich.

Method:

  1. Place the pan on a medium flame, add Butter.
  2. Once the butter melts, add Onions and cook till translucent.
  3. Now add Spring Onions and Tomatoes, cook for a while.
  4. Now add Capsicum, Mushroom and Carrot, cook.
  5. Add Red Chilli Powder and Salt to taste. Cook till done.
  6. Take Bread slice, place the above cooked n spiced veggies on this slice.
  7. Take another Bread slice and place Cheese slice on it.
  8. Place one slice on top of another. Apply Butter both sides and toast it till its crisp and ready.
  9. Cheesy Veg Sandwich is ready! Serve it hot with Tomato Ketchup!
Cheesy Veg Sandwichw

Cheesy Pasta with Veggies

Time Required: 40 Minutes
Servings: 6

Ingredients:

2 cups Pasta(any)
6 Cheese slice or 1 cup grated Cheese
2 tbsp Chilly Flakes
1 tbsp Mixed Herbs
Salt to taste
1/2 cup Grated Carrot
1/2 cup chopped Beans
2 tbsp Butter
3 cup Milk

How to cook Pasta:

Take a thick bottom vessel filled with water, add salt and olive oil and bring it to boil.
Now add required quantity of pasta and cook till done.
Strain it when done, keep aside.

Method:

  1. Heat a thick bottom pan, add Butter.
  2. After butter melts add Veggies(carrot and beans) and saute it for 3 minutes.
  3. Now add cooked Pasta and Milk. Give it a stir.
  4. Now add Cheese (grated or the slice), Mixed Herbs, Chilly Flakes and Salt.
  5. Cook till cheese melts and get incorporated properly.
  6. Cheesy Pasta with Veggies is ready! This tastes best when served hot.

Note: You can add your favorite veggies to this dish. Veggies like Carrot, Beans, Sweetcorn, Broccoli, Baby Corn, Mushrooms can be used.

Beetroot Carrot Cucumber Salad

Time Required: 15 Minutes
Servings: 4

Ingredients:

  • 1 Small Beetroot(peeled and grated)
  • 1 Small Carrot(peeled and grated)
  • 1 Small Cucumber (peeled and chopped into cubes)
  • 2 Strand Coriander Leaves(finely chopped)
  • Salt to taste
  • 1/2 tsp Garam Masala Powder
  • 1/2 tsp Chaat Masala
  • 1 tsp Red Chilli Powder
  • 1/2 tsp Jeera Powder
  • 1 Cup Curd

Method:

  1. Take a bowl, add Beetroot, Carrot, Cucumber and Coriander Leaves.
  2. To this add Garam Masala Powder, Red Chilli Powder, Chaat Masala, Jeera Powder and Salt.
  3. Now add Curd and mix with a spoon.
  4. And Beat the Heat Salad is ready!

Butter Cashew Paneer Masala

Time Required: 30 Minutes
Servings: 4

Ingredients:

  • 4 tbsp Butter
  • 1 tsp Jeera
  • 1 strand of Curry Leaves
  • 2 Medium Onion finely chopped
  • 2 Small Tomatoes finely chopped
  • 2 tsp Chilly Powder
  • 1 tsp Turmeric Powder
  • 1 tsp Coriander Powder
  • 1 tsp Jeera Powder
  • 1 tsp Garam Masala powder
  • 200 gms Malai Paneer(room temperature-cut into small cubes)
  • Salt (as per taste)
  • 12 Cashews (soak these cashews in milk for an hour)
  • 2 strands of Coriander Leaves for garnishing

Method:

  1. Take a pan, add Butter and let it melt.
  2. Now add Jeera, let it splutter.
  3. Add curry leaves and then onions.
  4. Cook till onions gets translucent, and now add tomatoes.
  5. Add Salt along, it makes tomatoes cook faster.
  6. Add all powders- Chilly, Turmeric, Coriander, Jeera.
  7. Cook till everything incorporates properly.
  8. Grind soaked Cashews with milk to get a coarse paste.
  9. Add this paste to the pan and mix well (add more milk if required).
  10. Add Paneer, cook for a minute. Adjust salt.
  11. Garnish with Coriander Leaves.
  12. Butter Cashew Paneer Masala is Ready! Serve it with Chapati!
