Ingredients:

  • 1 cup Sweet Corn
  • Salt to taste
  • 1/2 tsp Aamchoor Powder
  • 1/2 tsp Garam Masala Powder
  • 1/2 tsp Red Chilli Powder
  • 1 tbsp Butter

Method:

  1. Cook Sweet Corn in a pan with little water.
  2. Heat Butter in a pan, add cooked Sweet Corn, and all the remaining ingredients.

Choco Banana Cupcake

Ingredients:

  • 1 cup Sugar
  • 1 cup All Purpose Flour
  • 1/3 cup Cocoa Powder
  • 3/4 tsp Baking Powder
  • 3/4 tsp Baking Soda
  • 1/4 tsp Salt
  • 1 large Egg
  • 1/2 cup ripe Bananas(mashed)
  • 1/2 cup warm Water
  • 1/4 cup Milk
  • 1/4 cup Vegetable Oil
  • 3/4 tsp Vanilla Extract

Method:

  1. In a bowl mix the dry ingredients Sugar, All Purpose Flour, Cocoa Powder, Baking Powder, Baking Soda, and Salt.

  2. In other Bowl, whisk together the Egg, Mashed Banana, Water, Milk, Oil, and Vanilla Extract.

  3. Mix both dry and wet ingredients together,until combined.

  4. Line the cups with cupcake liners and pour in the batter (3/4th the cup).

  5. Bake in preheated oven at 350 F for 20 min or till done.

Coconut Dosa with a Watermelon twist (Konkani: Soyi Pole/ Kannada: Neer Dosa)

Time Required: 20 Minutes

Ingredients:

  • 1 cup Dosa Rice
  • 1 cup Grated Coconut
  • 1 cup Watermelon pieces(i.e the thin red and white layer left after having the watermelon)
  • Oil/Ghee
  • Salt to taste
  • Water

Method:

  1. Soak Dosa Rice for 4-5 hours (soak it in the night if you want to make Dosa in the morning).
  2. Take soaked Dosa Rice in the mixer, and add grated Coconut and Watermelon.
  3. Grind the contents till it becomes a smooth batter. Add Water if required.
  4. Transfer the batter into a vessel. Add Salt and Water. Mix it well. The consistency of the batter should be watery (Do not make the batter thick).
  5. Coconut Dosa with Watermelon twist batter is ready.

  6. Heat the non-stick Pan and pour the batter in a circular motion. Put Oil/Ghee around it. Cook on both the sides.

  7. Soft Dosa is ready! You can serve them with Jaggery (liquid) and Ghee, sweet Coconut Milk, or Chutney.

Pumpkin Bhakri (Konkani: Dudde Bhakri)

Time Required: 45 Minutes

Ingredients:

  • 1/2 kg Pumpkin
  • 2 cups Jaggery
  • 1/2 Coconut
  • Rice Flour
  • Salt to taste

Method:

  1. Peel the outer covering of the Pumpkin and chop Pumpkin into small pieces.
  2. Cook them so that they become soft.

  3. Grind the grated coconut and when it becomes a smooth paste, add the cooked Pumpkin pieces and grind into a smooth paste.

  4. Add Jaggery in the water in which you cooked the Pumpkin.

  5. Now add the ground paste into the sweet water. Add Salt.
  6. Boil this mixture and then add Rice Flour to it and mix it till it become quite dry.

  7. Now let it cool for a while and make balls and roll them to make bhakri.

  8. Cook both sides on a hot Tava.

  9. Pumpking Bhakri is Ready! Tastes more or less like PuranPoli. Goes very well with Garlic Chutney!

Spaghetti Pasta with Veggies

Time Required: 20 Minutes

Ingredients:

  • 200 gm Spaghetti Pasta
  • 1 cup Chicken Stock
  • Salt to taste
  • 2 tbsp Olive Oil
  • 2 tbsp Butter
  • 1 medium Onion
  • 6 Cherry Tomatoes
  • 4 large Garlic cloves
  • 2 tbsp Parsley
  • 1 Capsicum
  • 3 Basil Leaves
  • Parmesan Cheese for garnishing

Method:

  1. Cook Pasta as per the instructions on the box.

  2. Cut Vegetables, Garlic and Parsley and Basil as shown in picture below.

  3. Heat Oil and Butter in a pan, Add Garlic and fry till golden brown.
  4. Add Onions and saute till transparent.
  5. Add Capsicum and saute till cooked.
  6. Add Tomatoes, Parsley and Basil and saute for a min. Add Salt to taste.
  7. Now add Chicken Stock and bring it to boil and on simmer for 5 min.

  8. Now add Pasta cooked in salt Water.
  9. Mix it all well. Cook for 2 min.

Ground Rice Kheer (Konkani: Guloni / Tandula Vantuna Payas)

Ingredients:

  • 1/2 cup Rice
  • 1 cup Coconut Milk
  • 1 1/2 cup Jaggery
  • Water
  • Pinch of Salt
  • 1/4 cup Channa Dal
  • Dry Fruits – Raisins and Cashews

Method:

  1. Cook Channa Dal in the cooker. (2-3 whistle).
  2. Soak Rice for 2- 3 hours and grind it coarsely.

  3. Take water in vessel and add Jaggery. Allow it boil properly. Add dry fruits.

  • 2 tbsp Sugar
  • 1 cup Milk

  1. Take a cup, add Coffee Powder and Sugar.
  2. Pour in Hot Milk and give it a stir.

Colorful Eggless Cake

Time Required: 15 Minutes Preparing; 30 Minutes Baking

Ingredients:

  • 3/4 cup Wheat Flour
  • 2 tbsp All Purpose Flour
  • 1/2 cup Vanilla flavored Custard Powder
  • 1/2 cup Sugar
  • 3 tsp Coca Powder
  • 3/4 tsp Baking Soda
  • 3/4 cup Milk
  • 2 tbsp Oil
  • 1/2 tsp Vanilla Essence

Method:

  1. Mix the dry ingredients in a bowl- Wheat Flour, All Purpose Flour, Custard Powder and Baking Soda.
  2. Mix all wet ingredients in a bowl-Milk, Oil, Vanilla Essence and add Sugar and mix till sugar dissolves.

  3. Now mix dry mix with wet mix little by little until combined.

  4. Take half of this mix and add Coca Powder to it and mix well.

  5. Grease baking tin with Butter, add both mix in layers i.e yellow mix then coca mix, again yellow mix then finally coca mix.

  6. Bake for 30 minutes more or less at 375 F in a preheated oven.

Mango Side dish (Konkani: Aambya Kathe / Ummane)

Time Required: 20 Minutes

Ingredients:

  • 5-6 Mangoes (Slightly Sour ones)
  • 2 tbsp Jaggery
  • 1 tsp grated Coconut
  • 3 green Chillies
  • 2 Red Chilli
  • 1/2 tsp Mustard
  • 2 tbsp Oil
  • Asafoetida
  • Curry leaves
  • 1/4 tsp Methi
  • 1/4 tsp Urad daal
  • 1/2 tbsp Rice flour (optional) – To increase the quantity
  • Salt and water

Method:

  1. Wash Mangoes and peel the skin.

  2. Separate the pulp and take it in a vessel.

  3. Take the peeled skin of mangoes and add little water to it and start smashing it and then discard the skin.

  4. Now add this mixture to the pulp.
  5. Add Rice flour, Salt, Jaggery and water to this mixture.

  6. Take Oil in a kadai and then add Mustard seeds, chillies, Urad daal, Methi Seeds, and Curry leaves.

  7. Pour the mango mixture and allow it to boil.
