Clam Side-Dish (Konkani: Tisre Sukke)

Ingredients:

  • 1 cup Clam (cooked/removed from its shell)
  • 2 Onion
  • 1 Potato
  • 1 cup grated Coconut
  • 4-6 Red Chilies
  • Pinch of Turmeric Powder
  • Small Piece of Tamarind
  • 1 tbsp Coriander seeds
  • 1/4 tsp Garam Masala
  • Water
  • Salt according to your taste

Method:

  1. Cook chopped Potatoes.
  2. Put the grated Coconut in the Mixer/Grinder.
  3. Add Red Chilies, Turmeric, Tamarind, Coriander seeds and water.
  4. Grind it. The masala should be little coarse.

  5. Saute chopped Onion in a kadai till it becomes golden brown.
  6. Add little Garam masala and saute for a minute.

  7. Add cooked Clam and Potatoes and then pour the ground masala.

  8. Add Salt.
  9. Allow it to boil on the medium flame for 5 minutes.

Dried Prawns Curry (Konkani: Sukkile Sungtache Ambut)

Ingredients:

  • 1 small cup dried prawns (Cleaned)
  • 1 medium sized Onion
  • 1 cup grated Coconut
  • 4-6 Red Chilies
  • Pinch of Turmeric Powder
  • Small Piece of Tamarind
  • 1 tbsp Coriander seeds
  • Water
  • Salt according to your taste

Method:

  1. Clean and wash dried Prawns thoroughly.
  2. Put the grated Coconut in the Mixer/Grinder.
  3. Add Red Chilies, Turmeric, Tamarind, Coriander seeds and water.
  4. Grind it till it becomes smooth masala.
  5. Saute chopped Onion till it turns golden brown.
  6. Pour the ground masala.
  7. Put dried Prawns in the masala and add water.
  8. Add Salt.
  9. Allow it to boil on the medium flame for 5 minutes.

Jackfruit Idli (Konkani: Panasa Dhodak)

Time Required: 40 Minutes

Ingredients:

  • 15 Jackfruit pods
  • 1 cup grated Coconut
  • 1 cup Wheat Rava
  • Ghee
  • 2 spoon liquid Jaggery
  • Salt according your taste

Method:

  1. Grind Jackfruit in the mixer till it becomes a smooth paste.

  2. Transfer it in a vessel. Add grated coconut, liquid Jaggery, Salt, and Wheat Rava.
  3. Mix it well. Leave the mixture for 5 mins.

  4. Place the vessel in the cooker. Do not put the whistle but close the nozzle with a small cup.
  5. Allow it to cook for 30 mins.

Ingredients:

  • 15 Jackfruit pods
  • 1 cup grated Coconut
  • 1 cup Wheat Rava
  • Oil/Ghee
  • 2 spoon liquid Jaggery
  • Salt according your taste

Method:

  1. Grind Jackfruit in the mixer till it becomes a smooth paste.

  2. Transfer it in a vessel. Add grated coconut, liquid Jaggery, Salt, and Wheat Rava.
  3. Mix it well. The mixture should be a little thick.

  4. Take small portion of the mixture and start spreading it on tawa with your hand. If the mixture sticks to your hand, then dip your hand in little water and then again spread it.

  5. Cook on both the sides.

Onion Chutney (Konkani: Kandya Chutney)

Time Required: 10 Minutes

Ingredients:

  • 2 cups grated Coconut
  • 1 small-sized Onion
  • 3 Red Chilies
  • Small piece of Tamarind
  • Water
  • Salt according to your taste

Method:

  1. Take grated Coconut in the mixer vessel.
  2. Add chopped Onion, red Chilies, Tamarind, Salt, and little water.

  3. Grind the contents coarsely.
  4. Transfer the Chutney into a vessel.

Tip: If you have some left over chutney you can make Tamboli and serve it for White Rice.
