Khichdi (Rice, Moong Bean and Dal, Veggies)

Khichdi is a very easy to make nutritious dish which I make to feed my daughter (2 yr old) for lunch or dinner. Here I have used Rice, Dal and a vegetable. You can use different types of dal/pulses and different vegetables.

Ingredients:

  • 3 tbsp Rice
  • 2 tb Moong dal
  • 1 tbsp whole Moong
  • 1 Carrot
  • 1 tbsp Ghee
  • Salt to taste

Method:

  1. Wash Rice, Moong dal, whole Moong, and Carrot.

  2. Put these in a cooker and add Ghee and Salt to it.
  3. Cook it for 2 to 3 whistles.
  4. Your simple, yummy and nutritious Khichdi is ready!

Kadai Paneer

Time Required: 30 Minutes

Kadai PaneerĀ  is a one of the best recipes I have come across recently. My husband made it and it was very tasty. I am sharing his recipe with you all. Do try this recipe and I am sure you will keep making it. Paneer hasĀ a fairly high level of fatĀ andĀ proteins due to which it has a great value in diet. It also contains calcium and phosphorus.

Ingredients:

  • 250 gms Paneer
  • 1 tsp Jeera
  • 1/2 inch chopped Ginger
  • 4 medium Onions (3 chopped finely and one into square pieces)
  • 1 tsp Ginger-Garlic Paste
  • 1tsp Turmeric Powder
  • 2 tsp Chili Powder
  • 1 btsp Coriander Powder
  • 1 Capsicum (chopped into square pieces)
  • 5-6 Cashews (Optional)
  • 3 Tomatoes (2 tomatoes pureed along with cashews (Optional) and one tomato chopped into square pieces)
  • 3 tbsp Butter
  • 1 Bay Leaf
  • 1 inch Cinnamon
  • 2 tsp Kasuri Methi
  • Little Coriander Leaves
  • 2 tbsp Cream (Optional)
  • Salt to taste

Prepare Kadai Masala

Ingredients:

  • 4 tbsp Coriander seeds
  • 1 tbsp Jeera
  • 1 tbsp Peppercorns
  • 4-5 Red Chilies
  • 4 tbsp Oil
  1. Grind Coriander seeds, Cumin seeds, Red Chilies and Peppercorns to a coarse Powder.

  2. You can make this and store it in a airtight container and use it next time whenever you make.

Method:

  1. In a pan add Butter. Add Bay Leaf, Cinnamon, Panner (cut into square pieces), Onions, Tomatoes and Capsicum that are chopped into square pieces in it. Add 1 tbsp Kadai Masala (preparation is mentioned above), pinch of Turmeric powder, Chili powder, Coriander powder and Salt. Keep these sauted veggies aside.

  2. Pour Oil in a Kadai. Add Jeera and chopped Ginger. Let the raw smell of Ginger disappear.
  3. Now add finely chopped Onions into it and saute till they just turn translucent.
  4. Add Turmeric powder, Chili powder, Coriander powder and little Salt. Fry this masala for a while.

  5. Add Tomato Puree and cook till oil separates. Add water to adjust the consistency. Allow it to Boil.

  6. Once the gravy boils, add the sauted veggies into it. (Mentioned in step 1)
  7. Adjust Salt and water.
  8. Add Kasuri methi, Coriander leaves and Cream (optional).

  10. Serve it hot with Chapatis.

Gulab Jamun (with ready mix)

Time Required: 30 Minutes
Servings: 4

Gulab Jamun is an easy to make desert, if you have ready to make Jamun mix. MTR Jamun Mix is easy to make and tastes awesome! All you need to do is follow the instruction given on the packet or check the recipe below.

Ingredients:

For Jamun

  • MTR Gulab Jamun Mix
  • Water (accordingly)
  • Oil ( for deep fry)

For Syrup

  • 1 Cup Sugar
  • 1 Cup Water
  • 1 tsp Cardamom Powder

Method:

  1. Take the contents of MTR Jamun Mix in a bowl, add little by little water and knead the dough. Dough should be soft. Apply ghee to this dough. Close and keep aside for 10 minutes.

  2. Mean while, take a pan with Water and Sugar in it and place it on medium flame to make Sugar Syrup. Let the sugar dissolve and then lower the flame and keep it for about 10 minutes. Once Sugar syrup is ready, add Cardamom Powder and mix.
  3. Now, apply ghee to your hands and take dough, make very small jamun balls.
  4. Heat Oil, keep medium flame, drop in the balls and fry till you get a nice brown colour. Place these on paper napkins and immediately pour in warm sugar syrup that you have already kept ready.
  5. Continue this process till you fry all the remaining jamun balls
  6. Allow Jamun to rest in Sugar Syrup for sometime so the Jamun soaks in the syrup nicely.

Veg Pizza

How to make Pizza Base

Ingredients:

  • Approx 2 cups Maida / All purpose flour
  • 1/2 cup Water
  • 1 tsp Dry Yeast
  • 1 tsp Salt
  • 1 tsp Sugar
  • Ghee/Oil

Method:

  1. Take Luke warm water in a bowl (water should be warm and not hot!!!)
    Add Sugar and then dry Yeast. Mix gently and keep aside for 15 min.

    -If the water gets frothy, it means you are ready to continue with the process of making dough for pizza base.
    -If the water remains unchanged then repeat the process with warm water again because it means the yeast had not done its job.
  2. Now add Salt to this water and go on adding Maida to make the dough.

  3. Once the dough is ready, add Ghee/Oil and knead again to get a soft dough texture.
  4. Keep it closed for an hr or 2 or so. The size of the dough doubles. This is when you can continue.

  5. Now pat it and make the dough into 2 balls. Here the measurement I have used makes two medium Pizza base.

How to make Pizza Sauce

Ingredients:

  • 4 medium Tomatoes(finely chopped or Pureed)
  • 1 small Onion
  • 6 Garlic Pods
  • 1 tbsp Mixed Herbs
  • 1 tbsp Chilli Flakes
  • 1 tsp Sugar
  • Salt to taste
  • 2 tbsp Ghee/Oil

Method:

  1. Take a pan, add Ghee/Oil and heat it.
  2. Now add chopped Garlic, and cook till it turns slightly brown.
  3. Now add chopped Onions and fry till translucent, add Tomatoes, Salt and Sugar.
  4. Cook till tomatoes get mushy and thick.
  5. Add Chilli Flakes and Mixed Herbs.
  6. Pizza Sauce is now Ready!

Arranging Toppings

Ingredients:

  • 1 Onion
  • 1 Capsicum
  • 2 Mushrooms
  • Small piece of Pineapple
  • Few Spring Onions
    (Above Ingredients is what I have used, you can use your choice of veggies)

  1. Wash and chop all the above ingredients and keep aside.

  1. Take the oven safe pan, Take 1 ball of Pizza Base dough and spread it across to form a nice circle.

Baking(Convection Mode)

  1. Preheat the oven to 200 C, once its done you can hear a beep.
  2. Now open the oven and place the Oven Pan with assembled pizza in it. Mark 20 Minutes for cooking.

Steamed Caramel Custard Pudding

Time Required: 30 Minutes
Servings: 2

Ingredients:

  • 1 Cup Milk
  • 1 Cup Curd
  • 1 Cup Milkmaid
  • 1 tbsp Custard Powder
  • 1 tsp Vanilla Essence (optional)
  • 2 tbsp Sugar
  • 2 tbsp Water

Method:

  1. Take Milk, Curd, Milkmaid, Custard Powder and Vanilla Essence in a bowl.
  2. Mix it well and Strain. Keep aside.
  3. Take a pan, add Sugar and Water. Keep on low flame, till the sugar dissolves and forms caramel i.e the brownish liquid. Be careful at this point as it may burn.
  4. Pour this caramel in a steel bowl so it forms the base. Now pour the above(Step 1) mixture in it.

  5. Place the cooker with little water on medium flame. Put the bowl in cooker and cover with cooker lid without whistle.
  6. Let it steam for 15 min on low to medium flame. Turn the flame off in 15 min.
  7. Let it rest for another 10 min then take the bowl out and close it with a nice plate and turn it upside down.
  8. Steamed Caramel Custard Pudding is ready!
