Orange Juice

Oranges are citrus fruits. They are an excellent source of Vitamin C and dietary Fibre.

Did you know that color orange takes its name from the Orange fruit! 😉 So now that you know, we should proceed with juice making.

Ingredients:

  • 4 medium Oranges
  • 1 tbsp Sugar (optional)
  • ¼ tbsp Salt (optional)

Method:

  1. Cut the Oranges into half and squeeze the juice out.
  2. If you think that the oranges are sour, add sugar and salt and mix.
  3. Serve it cold!

Poha (Konkani: Phanni Phovu)

Time Required: 20 Minutes

Ingredients:

  • 2 tbsp Oil/ Ghee
  • 1 Onion
  • 2 Green Chilli slit
  • 1/2 tsp Turmeric Powder (more or less for the color)
  • 2 cups medium thick Poha
  • 2 tsp Sugar
  • Salt to taste
  • 1/4th cup Grated Coconut
  • Coriander Leaves for garnishing

Method:

  1. Soak Poha in water for 2 min, drain the water and keep aside.
  2. Heat Oil in a pan, add chopped Onions and sauté till transparent.

  3. Add slit Green Chilles and fry for 2 min. Add Turmeric powder and mix well.
  4. Now add the soaked Poha, Salt and Sugar. Mix well and cook for 2 min. Add grated coconut and mix.

  5. Garnish with Coriander Leaves and serve hot!

Wheat Flour Ladoos (Konkani: Gava Peeta Laado)

Time Required: 1 Hour
Servings: 20 Ladoos

Ingredients:

  • 1 cup Wheat Flour
  • 1 cup powdered Sugar
  • 1/4 cup Ghee(liquid)- more or less may be required
  • 1/4 tsp Cardamom Powder
  • Dry Fruits- Raisins (Optional)

Method:

  1. Fry Wheat Flour in a dry cooking pan till you get nice aroma from it.

  2. Take this flour in a dry bowl, add Cardamom Powder, Sugar and mix well.

  3. Now add ghee and mix well. Add raisins if required.

  4. Make ladoos. If you still cannot manage making ladoos add little more ghee and you should be able to.
  5. Keep in air tight container and have as and when you wish! 😉

Raw Mango Chutney (Konkani: Ambli Chutney)

Time Required: 10 Minutes

Ingredients:

  • 1.5 Cup grated Coconut
  • 12 Red Chilies
  • 2 slices of Raw Mango
  • 1/2 tsp Mustard
  • Small piece of Asafetida

Method:

  1. Chop Raw mango slices into small pieces.
  2. Grind Raw Mango pieces, Red Chilies, and grated coconut.

  3. Add Mustard and Asafetida to the ground chutney and grind once again.

Bread Cheese Toast

  • 3 Bread Slices
  • 1 cup Grated Cheese

Method:

  1. Place the Bread slices in a baking pan and spread cheese evenly over each slice.

Cheese Broccoli

Time Required: 20 Minutes

Broccoli belongs to the cabbage family and is high in vitamin C. It is a dietary fiber and contains multiple nutrients with potent anti-cancer properties. Broccoli has a strong, positive impact on our body’s detoxification system. This helps maintain healthy nervous system and regulates blood pressure.

With so much of health benefits why not get cooking with broccoli and include in your daily diet.

Ingredients:

  • 30 Broccoli florets
  • 1 tbsp Butter
  • Salt to taste
  • Pepper to taste
  • Grated Cheese (hand full)

Method:

  1. Cook Broccoli in boiling water, until tender and drain off all the water.

  2. Melt Butter in a pan and toss steamed Broccoli along with Salt and Pepper.

  3. Take this in a microwave safe bowl and add grated Cheese and cook on high for 1 min.

Brinjal side dish (Konkani: Vayngana Sukke/ Sagle)

Time Required: 30 Minutes

Ingredients:

  • 1 Large Brinjal (cut into small pieces)
  • 1 Large Onion
  • 1 cup grated Coconut
  • 8 Red Chillies
  • 1/4 tsp Turmeric Powder
  • Small Piece of Tamarind
  • 1 tbsp Coriander Seeds
  • 2 tbsp Ginger Garlic paste (Fresh ginger and garlic chopped)
  • 2 tbsp Jaggery
  • Oil
  • Salt according to your taste

Method:

  1. Heat oil in a pan and fry onions till translucent. Keep Aside.

  2. Grind together grated Coconut, Red Chillies, Turmeric Powder, Tamarind, and Coriander Seeds with some water. Add Ginger Garlic paste and half of fried onions; grind again to get a coarse masala.

  3. Add the masala to the remaining fried onions along with Jaggery, Salt and Brinjal. Add water if required.

  4. Close the lid and cook till done.

Prawns Fry ( Konkani: Bhajile Sungta)

Time Required: 20 Minutes

Ingredients:

  • 6 Prawns
  • 2 tbsp Red Chilli Powder
  • ½ tbsp Turmeric powder
  • Salt to taste
  • Chiroti Rava
  • Coconut Oil for shallow fry

Method:

  1. Mix Red Chilli Powder, Turmeric Powder, and Salt with little water and make a smooth thick paste.
  2. Marinate cleaned Prawns with the above paste for 30 min.

  3. Heat Oil in a frying pan, now apply Rava on to the marinated prawns and fry in oil till its cooked.

Fruit Cake

Time Required: 1 Hour

Fruit Cake is a cake made with candied fruits, dry fruits etc. These cakes are often served during Christmas or Weddings. If a fruit cake contains alcohol, it could remain edible for years.

Ingredients:

  • 3/4 cup Dry Fruits(Raisins and Cherries)
  • 1/4 cup Sliced Almonds for decoration
  • 1/2 cup Butter
  • 1/2 cup Sugar
  • 3 large Eggs
  • 1/2 tbsp Vanilla Essence
  • 1/4 cup Milk
  • 1 1/2 cup All Purpose Flour
  • 1/2 cup ground Almonds
  • 1 tbsp Baking Powder
  • 1/4 tbsp Salt
  • 1/4 tbsp grated Lemon Skin

Method:

  1. In a bowl, whisk together the All Purpose Flour, ground Almonds, Baking Powder, Salt, and grated Lemon Skin.

  2. Beat the Butter and Sugar until it’s fluffy. Add the Eggs, one by one, and beat well.

  3. Add Vanilla Essence and Dry Fruits and beat until incorporated.
  4. Add flour mix little by little and beat well, add milk and mix. Add remaining flour and beat.

  5. Take a Pan and apply Butter on the inner walls and lightly sprinkle the Flour and put the prepared cake mix.
  6. Decorate the top by adding Sliced Almonds.

  7. Preheat oven to 350 F and place the pan in oven for about 30 min.

Lassi

Time Required: 10 Minutes

Lassi is a popular and traditional yogurt-based drink originated in the Punjab (India). It is made by blending yogurt with water and Indian spices. Initially there were Sweet and Salted Lassi. These days you can find variety of lassi and popular one being mango lassi.

Ingredients:

  • ½ litre Curd
  • 6 tbsp Sugar
  • ¼ tbsp Salt
  • Cardamom Powder (optional)

Method:

  1. Mix all ingredients and blend in a blender for a min.
  2. Serve it cold!
