Masala Papad

Time Required: 10 Minutes
Servings: 4

Ingredients:

  • 3 Papad (Lijjat)
  • Salt
  • 1 small Onion
  • 1 small Tomato
  • 1 tsp Red Chilli Powder
  • 2 tbsp Lemon Juice
  • 2 tbsp Chopped Coriander Leaves

Method:

  1. Cook Papad keep aside.
  2. In a chopper take Onion, Tomato, Coriander Leaves and chop it finely.

  3. Mix Salt, Red Chilly Powder and Lemon Juice.

  4. Add this on the cooked Papad as toppings just before serving.
  5. Enjoy spicy n yummy Masala Papad!!!

Crispy Potatoes

Time Required: 20 Minutes
Servings: 4

Crispy Potato is one of my son’s favorite snack. He had it first in a restaurant and then one of my friend also made it and gave us. That’s when he asked me to try it. He loves to have it in the evening with a cup of milk. You should serve it hot immediately after you make it. If you don’t then it becomes soggy and potatoes will loose its crispiness.

Ingredients:

  • 20 Baby Potatoes
  • Half a cup of Mayonnaise
  • 1/2 tsp Chilli Flakes
  • 1/2 tsp Mixed Herbs
  • 1 tsp Onion Powder
  • 3 tsp Garlic Powder
  • 1/2 tsp Black Pepper
  • 2 tsp Paprika
  • 4tbsp Corn Flour
  • 2 tbsp Maida
  • Oil for deep frying
  • Salt to taste

Method:

  1. Wash baby Potatoes thoroughly. Cook them in cooker for two whistles.
  2. Take Mayonnaise in a bowl. Add Chilli Flakes, Mixed Herbs, Onion Powder, Garlic Powder, Black Pepper, Paprika, and Salt.

  3. Prepare a thin mixture of Corn flour and Maida.
  4. Now flatten the cooked Potatoes. Dip these Potatoes in the Corn flour and Maida mixture so that they get a thin coat on them.

  5. Deep fry these coated Potatoes.
  6. Place these Potatoes on a plate and put the Mayonnaise mixture on each of the flattened deep fried baby potatoes.
  7. Crispy Potatoes are ready! Serve them Hot.

Paneer Tikka

Time Required: 20 Minutes (Marination time – at least 1 1/2 to 2 hour in refrigerator)

Paneer Tikka is one of my family’s favorite starter. Paneer has a fairly high level of fat and proteins due to which it has a great value in diet. It also contains calcium and phosphorus.

Ingredients:

  • 250 gms Paneer
  • 200 ltr Curd
  • 1 Capsicum
  • 1 tsp Chilli Powder
  • 1/2 tsp Turmeric Powder
  • 1 tsp Ginger Garlic Paste
  • 1/2 tsp Cumin Powder
  • 1/2 tsp Coriander powder
  • 1/2 tsp Pepper powder
  • 1/4 tsp Garam Masala
  • 1/2 a Lemon
  • 1 tsp Kasoori Methi
  • 2 tsp Besan
  • 2tsp Oil
  • Salt to taste

Method:

  1. Cut Paneer into thin, big, and Square pieces. Cut Capsicum into square pieces.
  2. Take Curd in a bowl. Add Chilli Powder, Turmeric Powder, Ginger Garlic Paste, Cumin Powder, Coriander powder, Pepper powder, Garam Masala, Kasoori Methi, Oil, Salt and Lemon juice. Mix it Well.

  3. Add Besan to the mixture and mix it well so that no lumps are formed.

  4. Add Paneer and Capsicum pieces into the curd mixture and mix it well so that each piece is well marinated. Place marinated Paneer and Capsicum in refrigerator for 2 hrs.

  5. Now shallow fry Paneer and Capsicum pieces on grill pan with little oil or butter. I have used oil. The tawa should not be very hot. Shallow fry on low flame.
  6. Yummy Panner Tikka is ready! Serve it hot.

Note: You can use onion and tomato pieces also along with capsicum. My family members do not like tomato and onion that much so have just added Capsicum.

Shallow fried Cabbage and Onion (Konkani: Cabbage Vade)

Cabbage Vade is one of my favorite dish. This dish has a combination of Sweet, Sour, and Spicy flavours into it. It tastes Yum. It goes well with Rice or you can have it just like that also. I never used to like Cabbage before but when I started making this I love cabbage and I get Cabbage more frequently.

Cabbage is low in calories so it good for people who wanna loose weight. It has vitamin K and anthocyanins which help in improving mental function and Concentration. It also contains Cancer preventive compounds. Cabbage is Anti-inflammatory and Blood Sugar Regulator and therefore one has to include Cabbage in our diet. 

Ingredients

  • 1/2 a Cabbage
  • 4 medium sized Onions
  • 1/4 cup grated Coconut
  • 1/2 tsp Coriander seeds
  • Pinch of Turmeric
  • Small piece of Tamarind
  • 3-4 Red Chilies
  • 1 tbsp Jaggery
  • 1 cup Rava
  • Salt
  • 5 tbsp Rice flour (for binding)
  • Oil for frying

Method

    1. Wash and cut Cabbage finely. Chop Onion into small pieces.
    2. Grind grated Coconut, Red Chilies, Turmeric, Tamarind and Coriander seeds to from a coarse masala.
    3. Now mix Cabbage, Onion, ground Masala, Jaggery, Rice flour, and salt.

    4. Take small portions of this mixture and roll it in Rava and place it on the pan and pat on it to shape it like a patis.

    5. Fry on both the sides.

Deep Fried Battered Fish

Time Required: 30 Minutes

Deep fried battered fish- can be made with any kind of fish. Generally we cook/ deep fry various veggies like this. This time decided to try the same with fish. Yes, all fried item tastes yum and this tastes yummier with fish 😉

I have deep-fried cat-fish here, but you can try this with any other fish too including prawns.

Ingredients:

  • 2 boneless Fish cut into medium pieces
  • 1/2 cup Bread Crumbs
  • 1/2 cup Besan
  • 1 tbsp Red Chilli Powder
  • Salt to taste
  • Oil for deep fry

Method:

  1. Marinate Fish with Red Chili Powder, Salt and little Water. Keep aside for 20 minutes.
  2. Make a thick batter with Besan, Salt, Red Chilli Powder and Water.
  3. Keep together the Bread Crumbs, Batter and Marinated Fish.
  4. Now heat Oil to deep fry.
  5. Once ready, take each Fish slice, dip in Batter, coat with Bread Crumbs and then deep fry in Oil.

Seer Fish Fry using Riceflour

Time Required: 15 Minutes

Ingredients:

  • 1 large Seer Fish slices(you can take any other fish too)
  • 2 tbsp Red Chilly Powder
  • 1/2 tsp Turmeric Powder
  • Salt to taste
  • 1/4 cup Rice flour
  • Coconut/ Olive Oil for shallow fry

Method:

  1. Make a thick paste with Red Chilly Powder, Turmeric Powder, Salt and little Water.
  2. Marinate the Fish slices with the above paste.
  3. Let it stand for 30 Min.
  4. Apply Rice Flour on both sides of fish and shallow fry with Oil.

Tuna Baked in Honey-Chilly-Garlic Sauce

Time Required: 15 Minutes Preparation + 1 Hour Marination + 20 Minutes Baking

Tuna fish is from mackerel family. It’s a good source of Protein and Omega-3 fatty acids. Tuna may contain varying level of mercury and hence not recommended for pregnant ladies.

I have seen various recipes on Television about grilled chicken, and of course BBQ chicken and so on. So tried some variation to get it done with fish. Here goes the recipe.

Ingredients:

  • Tuna Fish (cut into chunks as shown below)
  • 2 tbsp Soy Sauce
  • 1 tbsp Red Chilly Powder
  • 2 tbsp Olive Oil
  • 2 tbsp Honey
  • 2 Garlic Cloves minced
  • Salt to taste

Method:

  1. Mix all the ingredients other than fish and make a paste.
  2. Now add Tuna and marinate it for and hour.

  3. Line the baking pan with Olive Oil.
  4. Spread Tuna in a layer and bake it for 20 minutes(10 minutes each side) in a 350F pre-heated oven.

    Tip: If you wish to give it a rusty look, just take a non stick pan, add a little oil and fry both side for a minute on medium-high flame.

Catfish Fish Fry using Riceflour

Time Required: 15 Minutes

  • 2 tbsp Red Chilly Powder
  • 1/2 tsp Turmeric Powder
  • Salt to taste
  • 1/4 cup Rice flour

  1. Make a thick paste with Red Chilly Powder, Turmeric Powder, Salt and little Water.
  2. Marinate the Fish slices with the above paste.
  3. Let it stand for 30 Min.

Gobi Manchurian

Time Required: 30 Minutes

Gobi Manchurian is an Indian Chinese dish very popular in India. There are two versions of this- one is with gravy and other is dry. The recipe below is for dry Gobi Manchurian. And I have used Besan instead of Maida and Cornflour.

Ingredients:

  • 1 large Onion
  • 10 Garlic Cloves
  • 1 small Capsicum
  • 3 tbsp Soy Sauce
  • 3 tbsp Tomato Ketchup
  • 4 Green Chillies slit
  • 1 large Tomato
  • Small bunch of Spring Onions
  • Coriander Leaves for garnishing
  • Salt to taste
  • Half of large Cauliflower cut into florets
  • 1/2 cup Besan
  • 1 tbsp Red Chilly Powder
  • Oil for deep fry

Method:

  1. Make a thick paste of Besan, Red Chilly Powder, Salt with little Water.
  2. Now dip each Cauliflower florets into the mix and deep fry in hot Oil and keep aside.

  3. Cut all vegetables and keep aside.

  4. Take little Oil in a pan and heat it. Add Onions and saute it till transparent.
  5. Add Garlic and saute till golden brown. Add Capsicum, spring Onions and Green Chillies and cook till done.
  6. Now add Soy Sauce, Tomato Ketchup and Salt.

  7. Add fried Cauliflower to this and mix well.
  8. Garnish with Coriander Leaves and serve it hot!

Tilapia Fish Fry

Time Required: 15 Minutes

Ingredients:

  • 2 Tilapia fish slice
  • 2 tbsp Red Chilly Powder
  • 1 tsp Turmeric Powder
  • Salt to taste
  • Oil for shallow fry
  • 1/4th cup Fine Rava (chiroti rava, semolina)

Method:

  1. Marinate washed Tilapia slice with a mix of- Red Chilly Powder, Turmeric, Salt and Water (mix should be a thick paste).
  2. Let it stand for 30 minutes.

  4. Serve it hot with onions and lemon as a Starter or a Side Dish for Rice.
