Ingredients:
- 3 cups Methi Leaves
- 2 small-sized Brinjal
- 1/2 tsp Turmeric Powder
- 1 1/4 tsp Chili Powder
- 1/2 tsp Coriander Powder
- 1/2 Lemon
- 2 tbsp Oil
- 1 spoon Sugar (optional)
- Asafoetida
- Coriander Leaves
- Water
- Salt according to your taste
Method:
- Wash Brinjal and Methi Leaves.
- Chop them.
- Pour Oil in a Kadai and add Asafoetida into the Oil.
- Add Brinjal and mix it nicely.
- Add Methi Leaves.
- Add Turmeric Powder and Salt. Mix it.
- Pour water and allow Methi Leaves and Brinjal to cook.
- Once the vegetables are cooked, add Coriander Powder and Chili Powder.
- Add Lemon Juice and mix it well.
- Garnish it with Coriander Leaves.
- Methi Leaves and Brinjal Side Dish (Methi ani Vaigana Bajji) is ready. You can serve it with Chapati or Rice.
