Methi Leaves and Brinjal Side Dish (Konkani: Methi ani Vaigana Bajji)

Ingredients:

  • 3 cups Methi Leaves
  • 2 small-sized Brinjal
  • 1/2 tsp Turmeric Powder
  • 1 1/4 tsp Chili Powder
  • 1/2 tsp Coriander Powder
  • 1/2 Lemon
  • 2 tbsp Oil
  • 1 spoon Sugar (optional)
  • Asafoetida
  • Coriander Leaves
  • Water
  • Salt according to your taste

Method:

  1. Wash Brinjal and Methi Leaves.
  2. Chop them.
  3. Pour Oil in a Kadai and add Asafoetida into the Oil.
  4. Add Brinjal and mix it nicely.

  5. Add Methi Leaves.
  6. Add Turmeric Powder and Salt. Mix it.
  7. Pour water and allow Methi Leaves and Brinjal to cook.

  8. Once the vegetables are cooked, add Coriander Powder and Chili Powder.
  9. Add Lemon Juice and mix it well.

  10. Garnish it with Coriander Leaves.
  11. Methi Leaves and Brinjal Side Dish (Methi ani Vaigana Bajji) is ready. You can serve it with Chapati or Rice.

Shallow Fried Potato (Konkani: Batate Podi)

Ingredients:

  • 3 Potatoes
  • 3/4 cup Semolina (Rava)
  • 2 tbsp Chili Powder
  • 1/2 tbsp Turmeric Powder
  • Oil
  • Salt according to your taste

Method:

  1. Wash and peel Potatoes.
  2. Slice the Potatoes as shown in the picture.

  3. Add 1 1/2 tbsp Chili Powder, Turmeric Powder, and Salt to the sliced Potatoes.

  4. Take Rava in a plate and add 1/2 tbsp Chili Powder and little Salt.

  5. Now apply the Rava mixture on both the sides of the Potatoes and place them on the hot Tawa.
  6. Shallow fry the potato slices till Rava on one side of the slices turns golden brown.

  7. Turn the Potatoes on the other side.
  8. Sprinkle little water on the Potatoes.
  9. Close it with a lid and keep it on low flame for 6-7 minutes.
  10. Hot and tasty Shallow Fried Potato (Batate Podi) is ready to be served.
