Shallow fried Cauliflower

Time Required: 20 Minutes

Ingredients:

  • 25 flat cut Cauliflower florets
  • 4 tbsp Red Chilli Powder
  • ½ tbsp Turmeric Powder
  • Salt to taste
  • 1/4th cup Semolina (Rava Thin)
  • Coconut Oil for shallow fry

Method:

  1. Mix – Red Chilli Powder, Turmeric Powder, Salt with little water and make a smooth paste.
  2. Marinate Cauliflower florets with the above paste and keep aside for 10 min.

  3. Heat Oil in frying pan and place the Cauliflower florets in Rava (so that rava is stuck on to the floret) and then place in the frying pan.

  4. Cook till done! Serve it hot!

Garlic Chutney (Konkani: Lashni Chutney)

Time Required: 15 Minutes

Garlic Chutney goes well with Dosa, especially Coconut Dosa (Soi Pole/Neer Dosa).

Ingredients:

  • 1 cup Grated Coconut
  • 3-4 Red Chillies
  • Tamarind to taste
  • Salt to taste
  • 4 Garlic Cloves

Method:

  1. Grind together Grated Coconut, Red Chillies, Tamarind and Salt with little water.
  2. Add Garlic cloves and grind again.
  3. Garlic chutney is ready! Serve it along with Dosa.

Radish and Drumstick Side-Dish (Konkani: Moolangi ani Maskasagi Sukke)

Ingredients:

  • 3 Radish
  • 2 Drumstick
  • 1 Onion
  • 3/4 cup grated Coconut
  • 4-5 Red Chilies
  • Pinch of Turmeric Powder
  • Small piece of Tamarind
  • 1 tsp Coriander Seeds
  • Water
  • Salt according to your taste

Method:

  1. Wash and clean Radish and Drumstick. Cut them into big pieces and put them in the Cooker.

  3. Chop onions into small pieces.
  4. Add chopped Onion and very little water just enough to cook vegetables.
  5. Cook them (2 or 3 whistles).
  6. Put the grated Coconut in the Mixer/Grinder.
  7. Add Red Chilies, Coriander Seeds, Turmeric, Tamarind, and water.
  8. Grind it (masala should be coarse).
  9. Add the ground masala to the cooked vegetables.

  11. Keep it on the flame till the masala becomes dry.

Pancake

A Pancake is round, thin and flat cake made from batter (mentioned below) and cooked in frying pan. This is served with variety of toppings like jam, fruits, syrup, meat etc. There are wide varieties of pancakes. The shape and size of pancakes varies worldwide. Pancake restaurant chains include IHOP (International House of Pancakes) and The Original Pancake House.

Ingredients:

  • 1 cup All Purpose Flour (Maida)
  • 1/2 tbsp Baking Powder
  • Salt to taste
  • 2 tbsp Sugar
  • 1 large Egg
  • 1 cup Milk
  • 2 tbsp unsalted Butter

Method:

  1. Mix all the dry items in a bowl i.e- All Purpose Flour, Baking Powder, Salt and Sugar.

  2. Whisk together all liquid items in another bowl i.e. Egg, Milk and melted Butter.

  3. Now add the liquid mix in dry items bowl and mix slowly- till u get a smooth batter.

  4. Heat frying pan, grease with butter and add ladle full of batter. Wait till pores are formed and then flip over and cook.

Chicken Fry

Time Required: 20 Minutes

Since we don’t get fresh fish here and as I felt like having fish fry badly, thought of trying the fish fry recipe with chicken. To my surprise it turned out good. So here goes the recipe. You can also add ginger-garlic paste for more flavor.

Ingredients:

  • 1 large boneless Chicken piece
  • 4 tbsp Red Chilly Powder
  • 1 tbsp Turmeric Powder
  • 1/4th cup thin Rava ( Chiroti Rava)
  • Salt to taste
  • Coconut Oil for shallow fry

Method:

  1. Mix Red Chilly Powder, Turmeric Powder and Salt with little water to get a thick smooth paste.

  2. Marinate cleaned and washed Chicken with the above paste and keep for 30 min.

  3. In a frying pan, add Oil and heat it. Once the oil is hot, apply Rava on to the chicken and fry on a medium flame, both sides until cooked.

  4. Serve chicken fry with cut onions and lemon!

Sweet Dosa (Konkani: Goda Polo)

Time Required: 20 Minutes

Goda Polo means Sweet Dosa. Its sweet taste is because of the jaggery we add to the batter. It is a Konkani dish. Goda Polo tastes good with Ghee or Butter. Same batter can be used to make Goda Appe.

Ingredients:

  • 2 cup Dosa Rice
  • 1/4 tbsp Methi Seeds
  • 1 cup Grated Coconut
  • 1 cup thin/thick Poha (Beaten Rice)
  • 1/4 tbsp Turmeric Powder for color
  • Jaggery to taste
  • Salt to taste

Method:

  1. Soak Dosa Rice and Methi seeds in water separately for four hrs.
  2. Remove water from Dosa Rice. Grind- Dosa Rice, Methi Seeds along with the water, Poha soaked in water for a min and Grated Coconut. Grind this into smooth thick batter.
  3. Now add Jaggery, Turmeric Powder and mix well.
  4. Just sprinkle the Salt on top of the batter and keep overnight for fermentation (min 6-8 hrs).

  5. Take a frying pan, apply ghee and pour ladle full of batter and make polo (dosa). Cook both sides.
