Potato Poha (Konkani: Batate Pova)

Potato Poha is a carbohydrate-rich food and gives you energy that is required to start your day.

Ingredients:

  • 3 cups thick Pova
  • 1 Potato
  • 1 Onion
  • 1 cup grated Coconut
  • Coriander Leaves
  • 3 tsp Sugar
  • Water
  • Salt according to your taste

Seasoning:

  • 2 tbsp Oil
  • 2 Red Chilies
  • 1 Green Chili
  • 1 tsp Mustard
  • 1/2 tsp Turmeric Powder
  • 8-9 Curry Leaves

Method:

  1. Wash Potato and peel it. Chop it into small pieces.
  2. Chop Onion into small pieces.
  3. Take Potatoes in a vessel, add water and allow it to cook.

  4. Meanwhile take Poha in a vessel, soak for 2 minutes (until it is slightly soft) and drain the water. Add grated Coconut, Sugar, and Salt. Mix well and keep the Poha mixture aside.

  5. Take a Kadai and add Oil into it. Add Red and Green Chilies, and Mustard. Allow the Mustard to splutter and then add Curry Leaves.
  6. Add Onion and saute till it becomes golden brown.

  7. Add Turmeric Powder and the cooked Potato pieces.

  8. Add the Pova mixture and mix it well.
  9. Close it with a lid and keep it on low flame for 10 minutes. Tasty Potato Poha (Batate Pova) is ready!
