Ingredients:
- 1/2 kg Pumpkin
- 2 cups Jaggery
- 1/2 Coconut
- Rice flour
- Cardamom powder
- Salt
Method:
- Peel the outer covering of the Pumpkin and chop Pumpkin into small pieces.
- Cook them so that they become soft.
- Grind the grated coconut and when it becomes a smooth paste, add the cooked Pumpkin pieces and grind into a smooth paste.
- Add Jaggery in the water in which you cooked the Pumpkin.
- Now add the ground paste into the sweet water. Add Salt and cardamom powder.
- Boil this mixture and then add Rice flour to it and mix it till it become very dry.
- Allow it to stand for 2 hours.
- Make small puris on the banana leaf using your fingers.
- Deep fry them.
- Hot and tasty Pumpkin Fry (Konkani: Dudya Vade) is ready!
