Pumpkin Vada (Konkani: Dudya Vade)

Ingredients:

  • 1/2 kg Pumpkin
  • 2 cups Jaggery
  • 1/2 Coconut
  • Rice flour
  • Cardamom powder
  • Salt

Method:

  1. Peel the outer covering of the Pumpkin and chop Pumpkin into small pieces.
  2. Cook them so that they become soft.

  3. Grind the grated coconut and when it becomes a smooth paste, add the cooked Pumpkin pieces and grind into a smooth paste.

  4. Add Jaggery in the water in which you cooked the Pumpkin.

  5. Now add the ground paste into the sweet water. Add Salt and cardamom powder.
  6. Boil this mixture and then add Rice flour to it and mix it till it become very dry.

  7. Allow it to stand for 2 hours.
  8. Make small puris on the banana leaf using your fingers.
  9. Deep fry them.
